I'm reorganizing all of the pantry supplies I bought at the beginning of the pandemic and for emergency situations in general. I have two types of high protein, GF bars that are about 6 months past their best by dates. would you keep them, especially to eat in an emergency?

Depending on the value of the bars (ie, might not be worth your time), and since you’re looking at ‘best before’ rather than ‘use by’ dates, I’d flick the manufacturer an email and ask from a food safety perspective when they’d need to be consumed by.

In general 'best by' means loses taste and/or quality. I tend to think with those and crackers etc they will be stale, but I would not keep them much longer, but that's me.
Years ago Pepperidge Farms guaranteed their products for 6 months after the sell by date. Not sure about now.

I have found that some bars really need to be kept in the fridge or they get moldy (built bars and Lars bars have gotten moldy for me). I sound probably open one and look at it and smell it. If it is ok, put them in the fridge

If I wasn’t going to eat them within the next month, I would toss them.

I think with protein bars, it comes down to 'are they edible' if you taste one. My company makes protein shake powder, and it really can start to get stale (and the oils in it can start to get stale/rancid) the longer past the exp. date it sits. Some food products have 'best by' dates that really are truthful. The storage conditions make a difference, too-- have they been kept at a cool room temperature, or have they been exposed to higher temps/temp changes?
If the texture of the bar feels 'off' (like, are they hard-as-rock inside the package?) then I'd probably pitch them and not even try one. My dad once actually broke a tooth on a protein/nut bar that we didn't realize was past its expiration date-- I felt so bad for giving it to him!

I'd try eating them. I've eaten some that were over a year past expiration date and I didn't even realize they were expired. Others, one bite and into the trash it went.
