I really want to get new steak knives and food prep knives. I want to get them on Amazon, as Amazon Prime Day is in a couple weeks and we have rewards $$ to spend. I currently have a block of knives that includes steak knives and a variety of food prep knives. I only use two of them daily. I also have another 4 piece set that I got at Costco a few years ago that I use. I cut up lots of fruits/vegs daily, so they get a lot of use. I have a knife sharpener, but even after sharpening the knives I use aren't great. If you have knives you love, that you bought from Amazon, please share!

I love my Cutco knives. I’ve had them 25 years and they’re amazing. I just checked and you can buy thru Amazon.

Swilling, Henckel or Wusthof knives are all excellent brands and what I've owned for 40 years. Of those brands, the Zwilling have held up the best IMO. Zwilling & Henckel are both owned by Zwilling J.A. Henckel (Germany), with Zwilling being the better brand. Zwilling has forged blades that are made in Germany or Japan, while Henckel has mostly stamped blades that are made in India, China, Thailand and/or Spain. A forged blade will have better balance, last longer and hold an edge better. Wusthof is more comparable to the Henckel line. I recommend you check out these links to educate yourself on the different type of knives and how they compare to each other. In addition to how the blades are made, consider the Rockwell hardness, how the blade is attached to the handle, and the balance of the knife. Zwilling for sure! I also have their honing stick and their blade sharpener.
I hand wash and they awesome knives. I have serrated, chefs knife, pearing knife, prep knife, and slicing knife. I do not sharpen my serrated knife.

Since how a knife feels in your hand can be so important, I’d make sure that you can return your purchase without a restock fee. Mostly I have had zero issues with Amazon returns, but occasionally I’ll end up purchasing on Amazon but shipped from elsewhere with a not great return policy.

I do not recommend there poultry shears though. They sucked. I'm assuming you had the ones with black plastic handles and I agree they are not the best. Zwilling makes a fabulous kitchen shear though that is made in Germany completely from steel. I purchased my pair in Frankfurt in 1987 and they are still going strong - never having been sharpened! DD wanted a pair for Christmas a couple of years ago because she knew how good they are. Took a lot of work to find them but worth the effort and investment. Zwilling Stainless Steel Kitchen Shears

This is the chef knife DH and I both chose, in different sizes. Good quality Japanese blade, and it came down to how it felt in our hands. At least I think it is the same, at Sur la Table they call it the Artisan series. So if you want to try it in person first you can go there. Plus they have many other quality brands.

If possible, definitely try a knife out in person. How it feels in hour hand is essential.
I’m all for a good knife, but I don’t know that I need the BEST knife out there. I cook almost exclusively from scratch, but I’m not using my knives for multiple hours daily. My Chicago Cutlery knives made it 25 years and are still in good shape. I replaced them with a Wusthof chef’s knife and a paring knife. They hold an edge well and it’s easy to fine tune them with my honing blade. If they make it another 25 years, I’ll be happy.

Shun Knives are worth every penny they cost (and they are costly!). And available from Amazon. I have had Chicago Cutlery and Wusthof, and neither are comparable to Shun, Really, these knives are just outstanding and hold an edge better than anything else. I have a chef knife and a 6 inch (I think that is the size—just a small chef knife) plus a boning knife and a small paring knife, plus one with a serrated edge. I use them all and love them.

I can say don't order the Cuisinart knives, which frequently go on special on Amazon. I got them as a gift for Mother's Day 2020. By 6 months, the steak knives already had rust on the handle, and several of the blades are terribly unbalanced - the handles are too small for some of the longer blades. I refused to get rid of the smaller Henckel set it was replacing - they are superior in every way, except the poultry shears, which dulled out pretty quickly.

I have this set of steak knives. Henckels Steak KnivesI bought mine at Bed, Bath and Beyond over 14 years ago and they are still awesome. I don't remember exactly when I got them, but I know I already had them when we redid our kitchen in 2007. I can't help you on chef's knives. I think you have to go to a store and hold a knife in your hands to decide if it is for you.

Cutco, and def don't miss out on their kitchen scissors. Ive had mine for over 20 years, and everyone in my family knows better than to take off with them! Also Laguiole for steak knives (not sure if you can get those on Amazon though).

We've had our Henckels knives for at least 25 years--still love them. They came with a sharpening 'steel' ( I think that is what it's called), and DH will use it about 2xs/year, and it keeps them wonderfully sharp. We bought them at a Henckels store at the outlets, they were quite pricey, but have proven worth the cost.

Bought them from a guy selling them from door to door. Best damn knives EVER! Got the whole set (butcher, paring, deboning scissors) that included 5 steak knives. I remember thinking at the time how crazy of a purchase it was because I think it was at least $200 back then. Worth every.single.penny!!!!!

The kids have gotten in trouble for taking them off to use on a "project" and not bringing them back. They are the BEST scissors! Now the trouble-makers just steal them out of my office. FARTS!

I pity bought Cutco knives from a friend's daughter 25 years ago. I use them every day and they are still great. A few years ago I added a Santoku and a bird claw and the quality is still excellent.

Another vote for Cutco knives. We pity bought some steak knives 30 years and they are still going strong as the day we bought them. They aren't the most attractive knives but they do the job well.

I love my cutco knives and have had them since 1978 when I was in college and got sucked into going into their training to be a cutco salesperson. The only person I sold them to was myself. If I knew then what I know now, I would have sold tons. They are amazing. I use them daily and they are always so sharp. The butter knives are great.
