Definitely taking note of some of these ideas. We try to make easier things the weeks that my husband has to report in-person for work. This is one of those weeks. But what are we having this week? Chili.

Rotini, cheeses (mozz, cheddar, anything we have on hand tbh), black olives, pepperoncini, grape tomatoes, and cucumber in an italian vinaigrette has been our go to "keep in the fridge" pasta salad for a month now. Great right away, even better a day or two later.
Picnic foods are good ideas for hot weather meals too! A time to try new sandwiches and wraps, chef salads are always big and filling meals.
It was hot as hell yesterday and we did hot dogs and fruit for dinner. Grilling meat + fresh fruit is another go to for us.

Growing up we didn’t have a/c and would have tuna salad. Make tuna (with mayonnaise like you usually make for tuna sandwiches) and mix it with a bag of lettuce. Voila tuna salad. I would go with a salad mix that has carrot bits and stuff in it.

lots of good ideas here! Now, for me when I think of hot weather cooking I cook dishes that avoid heating the kitchen up, so that leaves out any pasta for me. I find nothing heats up my kitchen more than putting a huge pot of water to boil.
I have a Ninja Foodi so I'll be using that to air fry/pressure cook our proteins. I use the rice cooker for rice and green salads on the side, or cucumber salad Persian style using my home grown tomatoes which are going like gang busters because they love all this heat.
Cooler dips are great too, like tzatziki on the side of some grilled chicken and grilled tomatoes.

Same here and I have no ideas. Tonight hubby is going to make cheesesteak sandwiches on the Blackstone griddle outside but no ideas for the rest of the week as I know he won’t want to stand in front of a hot grill when it’s even hotter tomorrow night.
Hubby snd I could do salads but my teenager not so much snd I’m the only one that does pasta or potato salads.

We grill, use the Instant Pot, or the Air Fryer. I try to never use the oven if it’s that hot and limit the use of the stove top. DH got a Blackstone last Father’s Day and we made 80-90% of our meals on that all summer.

I made Mac and cheese the other day in my instant pot. Kept the house cool so that is a possibility. I am not a fan of meat cooked in it though well I have only tried chicken a few times. Just throwing the pasta idea out there vs cooking it on the stove. Of course release Ig the pressure can make a huge mess (don’t attempt with GF pasta, did that once snd it’s not recommended). Be sure to use a towel over the valve and it may still make a mess.

This week we’re having shrimp in the air fryer, hamburgers and steaks on the grill, and cold sub sandwiches. No oven allowed lol
My a/c is working overtime because our living room is warmer due to sky lights. No opening the garage either.

Chicken lettuce wraps, salads, sandwiches (slow cooker pulled pork, instant pot chicken breast), tacos (street style chicken and beef or instant pot carnitas), basically anything that doesn't involve the oven or much indoor cooking.

in anticipation of the heat wave, we bbq's last night so we would have leftovers for a few days. i will pick up a supermarket chicken later in the week and that's good for another couple of nights. that should bring us to the weekend when we eat out anyway.

We have two meals that will last for several dinners when its hot. The first is black bean and tomato quinoa. It does require having the stove on to cook the quinoa. It's so delicious. It lasts the two of us 3+ meals. The other is grilled shrimp and vegetables with orzo in pesto sauce. It requires the stove on to cook the orzo plus the barbecue to grill the shrimp and vegetables. It also lasts us about 3 meals and its crazy good.

Gazpacho is a perfect hot weather dinner, either a traditional recipe or something with a twist like Watermelon Gazpacho. Change up the bread and fillings for sandwiches. I'll take a whole focaccia, slice it in half and use an olive tapenade, bruschetta sauce, pesto or Bitchin' sauce instead of mayo and mustard on both halves. Layer with turkey. cheeses, cucumber, tomatoes, arugula, etc., put the top on and cut into pieces. Banh Mi's are great cold, made with a whole baguette and filled with quick pickled vegetables, herbs and/or cold grilled chicken. Ceviche is also a great hot weather dish that you can adjust to your family's likes.

I also precook a whole package of bacon and freeze it. I can pull out a couple pieces and make a BLT.

Have you done chicken wings? Not yet. DH says there isn't enough meat on one to make it worth eating. I might try to make some next time DS is up. We do chicken nuggets or tenders in ours all the time and they turn out so crispy and delicious! And way more meat than what’s on wings.

I can pull out a couple pieces and make a BLT. We do the same with the rotisserie chicken, but I buy precooked bacon from Costco too! It comes in a pack of 48-50 slices for about ten bucks. It’s so much less messy than frying it on the stove or baking it in the oven, plus it’s hot and perfectly crispy in 45 seconds in the microwave. We usually eat half the chicken one night as is, and I’ll shred the other half the second night and make Asian Chicken Salad from the Dinner Doctor cookbook from the leftovers. Other things we have when it’s hot are burgers or brats on the grill, chicken salad or tuna salad, frozen pizza in the air fryer (takes literally eight minutes to bake from frozen to done), potato salad, coleslaw or broccoli slaw, fresh fruit or raw veggies, basically anything that we can make in the microwave, instant pot, air fryer or the grill.

Cold shredded chicken on a croissant roll. Cold shredded honey ham on a croissant roll. Cheerios. Smoothie. In N Out burger or Raising Cane's, because if it means no cooking, then it's good in any type of weather. Edited to add.... Every few weeks I stop by the Outback and buy a few loaves of the brown bread (best bought unheated, so that it doesn't get hard when reheated). I keep them frozen. Perfect by itself for lunch or dinner. I have little 2oz disposable cups that I put butter in, if I am taking it to work with me.

It's been so hot and humid here in the middle of the USA! Tonight we are having Chicken Gyros. I have an indoor panini sandwich grill thing that I use to cook the chicken. I cut it into 1" strips and season it with Mediterranean seasoning. We serve the chicken on Greek pita bread with lettuce, tomatoes and topped with a very similar Sour Cream Tzatziki Sauce Only we use dried MINT instead of DILL. I also add black pepper. So fresh and yummy for a hot day!

Chickpea Egg Salad (from SkinnyTaste)
2 cans (15 oz) chickpeas, rinsed and drained 6 large hard boiled eggs, sliced crosswise kosher salt and black pepper, to taste 2 tablespoons chopped red onion 2 tablespoons extra virgin olive oil 2 tablespoons apple cider vinegar 1 tablespoon chopped fresh cilantro or parsley
It’s just me here tonight, though, so I’m having chips and pico de gallo for dinner!

I do taco salad or pasta salad. Cook the meat and pasta in the AM when it’s cooler, then assemble everything at dinner time.

I just had a salad for dinner.... cold left over steak, raw spinach, feta, cheddar cubes, sunflower seeds, ranch dressing. Wish I had some croutons. Yum.... now I want chocolate. 🤣

I love a chickpea salad with Mayo, celery, lemon juice, scallions, dill and a little onion powder. I have it with hummus and chopped tomatoes. You could add pita chips for some crunch.
