My DD found an excellent recipe she's perfected
BBQ Chicken Nachos
She marinades the chicken breast in apple juice the night before and grills the chicken breast before chopping it up after it's rested. Toss it in a bowl with your favorite BBQ sauce.
Velveeta cheese melted on the stove with a touch of the chicken's cooked juice added.
Layer:
Tortilla chips, BBQ chicken, diced tomatoes / onions (we sub salsa sometimes), black beans, corn, cheese sauce. Toss it in the oven to warm it up a minute. Then top with sour cream / guacamole & cilantro. Squeeze a lime over it all. Devour.

Pulled pork nachos are really good add cheese, cilantro, sour cream, green onions snd bbq sauce. Yummy.

Taco meat mixed with refried beans, cheese and/or queso, green onions, black olives, salsa or pico, sour cream, guacamole. Ds will put lettuce on his also. Dh likes jalapenos.

We probably haven’t made homemade nachos in a dozen years. But some of our favorite toppings are good shredded cheese, fajita meat or grilled chicken, black olives, and sour ream and guac to dip in. Pretty basic stuff. voltagain ,what a great idea! I have a shrimp taco recipe I love with a great lime creme sauce. That’s going on the meal plan for next week, thanks. The key to theirs being so good was the thin and crispy tortilla chips they used. The other couple of places here don't have that type of chip. Our Chili's is the closest to the thin crispy chip I like and prefer. I love Chili’s chips and those like them!
