Breakfast potatoes with onion and bell pepper. Yum! Crispy golden on the outside, soft on the inside.
ETA: I think having cheese, bacon, eggs, meats on the side makes it a complete meal and one that each person can tailor to them.

Sweet or savory?
Sweet—My favorite is Ina Garten’s baked French toast. Make it the night before, pop it in the oven while you do other things, and it’s done.
Savory—a frittata with all the leftovers from the fridge. Again, quick and simple.

Could I add a question too? What is your favorite, not so fatty bacon. I like bacon every so often, but I hate the fat. I buy Applegate Naturals Sunday Bacon, but end up throwing out 1/2 or more of each slice because of the fat. Does a less fatty bacon even exist?

This is so easy. I often just make 1/2 a recipe and bake it in a square baking dish. It's really good with salsa. Green Chili Egg Casserole

Brunch is my favourite meal, and I have a LOT of favourite dishes. Number 1 would be a Quail Egg and Pancetta Tart (which can be made with normal eggs if you don't have quail eggs). Our stock standard brunch dish most weekends is smashed avocado with chilli and goat's cheese on toast, with a poached egg on top, and bacon on the side.
ETA: Actually, that's the wrong photo /\ /\ /\ but you get the idea.

LOL I don't eat bacon very often, but I cook it crispy. Almost burned. The fat is not at all fatty anymore. I can't stand soggy bacon with slimy fat. What do they do with pork belly in other countries? Throw it out? That's all American bacon is. Cured pork belly. Pretty sure that Canadian/Australian variety is a cured pork loin.

Pork belly is super popular here. We cook it in a big slab, with the crispy crackle on top. It's our favourite dish in this house. In fact I made it last weekend for Father's Day. Maybe that's why we never had streaky bacon, because we eat so much pork belly? I like my bacon super crispy and almost burned too Merge . I also love crispy fried prosciutto too. Maybe even better than bacon. Up until the last few years, we really only had short cut bacon (from the back of the pig), or middle bacon (combination of short cut and streaky). Center Cut bacon has the least fat of the pork bacon. Turkey "bacon" is not fatty at all.

I'm particularly taken with the bacon and cheese scrolls and also the Avocado and Bacon Brekkie Pizza. While I don't get around to eating breakfast, they would be great for a late brunch or lunch. I plan on trying them soon!

I don’t eat bacon often because it is so messy to make, but I think I’ve heard that this is fewer calories/points in my WW message boards.

Does a less fatty bacon even exist? perfect crispy bacon: preheat oven to 400 line two rimmed cookie sheets with foil (if you want) for easy clean up lay bacon strips on cookie sheets, close but not touching put in oven for 20 minutes (i have to do 17 based on my oven) no turning, no standing around while it's frying. perfect every time. lay out on paper towels to soak up grease let cookie sheets cool and grease harden, then you can just fold up the foil and toss.
