It appears that I'm really lactose intolerant. At first, it was just milk, especially anything over 2%, that sent me to the bathroom. Then it's all ice cream 😠But hey, I can still have most cheeses. Then one by one, certain cheese or brands are taken off the list. I'm down to parmesan and swiss at this point. I can do sharp cheddar but that honestly only tastes good on tacos and burgers. We don't eat those enough so cheese slices start getting moldy after a while. I can do a few others blends as long as I don't go overboard but cheese!
Sour cream is ok for now but probably not for long. I have to be really careful with butter. Too much of real butter, and I'm in the bathroom.
What are some good plant based (fake) cheeses out there? I see some in the store but I don't know which are good. The other known lactose intolerant people in my family are either completely dairy free and don't even eat the plant based ones (my aunt) or they suck up the aftermath for their pecan ice cream (looking at you, Dad). If I avoid full fat dairy, I'm usually ok in small amounts.

If I avoid full fat dairy, I'm usually ok in small amounts. I detest all plant based cheese so no help there. But if you tolerate the occasional slice, you can freeze them so they don't mold. I put a square of wax paper between them so they don't stick together. All of the hard cheese freeze well. They can get a bit crumbly but for tacos or being melted it works fine.

My niece is vegan so I've tried quite a few. I would have to say none LOL. Most are really really awful and just aren't a good replacement. My daughter is lactose intolerant and just has the cheddar or parmesan in very small amounts and she freezes slices or small amounts so it doesn't go to waste.

Have you tried taking Lactaid pills? DS uses the Kirkland brand from Costco, they are very reasonably priced

I have the same experience with dairy. For me, it was the A1 protein, not lactose Honestly, nothing is going to taste like the real deal. I was a few years out from eating cheese before I could enjoy vegan cheeses. I don’t like any sort of cheese slices or cheese shred. That Dayia crap is the worst.. It doesn’t melt well, doesn’t taste good, and it certainly doesn’t taste like cheese.
However, I do like Kite Hill for cream cheese and ricotta cheese. I thought they were good substitutes, especially if you added something to them like a spice blend (for a savory taste) or a fruit preserve (for a sweet taste). I used to buy a cream cheese in a square container that was really sour and quite frankly horrible. But it made a good sour cream substitute. I recommend to just buy one of each kind of vegan cheese and taste test them. They are crazy expensive, but it was the only way to really know.
Now that we live in Belgium, I can’t find cream cheese or ricotta substitutes. So I make my own. Most are really quite simple to make.

Have you tried taking Lactaid pills? DS uses the Kirkland brand from Costco, they are very reasonably priced I tried that. I was so sick that I was dry heaving. It's better to just suck it up and be close to the bathroom within an hour or so and let it come out the other end. The lactaid pills do not help me digest. I'll look into freezing cheddar slices.

I'll be the outlier as I love Daiya cheeses. I've used their slices on burgers and in paninis and find they melt nicely and taste good. The shreds work so well on nachos, carne asada fries and in frittatas that I don't use real cheese for the rest of the family any more. Miyoko is another brand I really like. I've not tried their cheese slices, but the butter, cream cheese and roadhouse pots are excellent.

I’ve had a few amazing cashew cheese sauces in restaurants but haven’t been able to recreate that yet at home but I’ve been trying a variety of plant-based cheeses. I like cashew cheese over almond cheese. I tried Forager brand sour cream recently and it didn’t upset my stomach at all! It’s thinner than cow-milk sour cream, and has an almost cinnamon taste that was off putting at first but then grew on me. If I mix it with other ingredients it’s not noticeable.

I think I thought a few of the Daiya were ok.
Some cheese have very little lactose cheddar snd Parmesan so maybe small amounts of those.

Never liked Daiya or any of the other slices. Too funny I tried a kite hill one recently and it smelled so good but the after taste got me. If I couldn’t eat any cheese right now though I would probably be eating it. It wasn’t that bad just not great.

I hate Daiya. Really like Miyokos brand. TJs sells their "unlox" cream cheese that does remind me a bit of salmon with cream cheese. Some of the upscale markets here sell harder Miyokos cheeses in rounds. They are delicious.
Pretty much all store-bought cheese substitutes I've seen rely heavily on oil.
We hit the jackpot with an artisanal vegan cheesemaker who lives locally. He uses no oil of any kind in his cheeses. They are delicious! Name of his brand is Sproutcraft Creamery. He is currently licensing and doing all he needs to do in order to sell his cheeses through a business called Santa Barbara Hives in Carpinteria. I hope he can ramp up production and keep the quality. Each cheese is currently handcrafted. It is expensive, but a real treat for those of us who miss real cheese. Non-vegans can't tell the diff!

That doesn't bother me the way Colby jack or pepper jack does. I miss having a good pepper jack cheese on my burger. I googled goat cheese and there's a Colby jack? I'm going to look the next time I head to the store. Anyone know how Aldi's selection is? We just got one.

I can't tolerate any dairy products, but do fine with goat and sheep's milk cheeses. Find a store with a large cheese area and ask for suggestions. They walked me through mild to stronger types, as well as which types will melt. My favorite is Kasseri. It's mild and melts easily. There are local cheeses, too, that are delicious.

This won't help because I'm in Canada and smaller town - but we have a local-ish goat dairy farm that makes all kinds of cheese. I wonder if you google searched for local goat farms? See if any make cheese?
