The Swiss steak in the pressure cooker experiment yesterday went well. It was just like the one I bake for 1-1/2-2 hours except it took only 20 minutes in my pressure cooker. I'll make it again but will cut back on the liquid or take the cover off when it's done, turn it to brown and cook the liquid down.
Anyway, I'm having leftovers tonight, what are you having?

We are having pork chops with apples and maybe some mashed potatoes. I will also precook bacon for pizza Tuesday night. I bought a frozen turkey at lunch and it is sitting in my car while I am at work. I am trying to figure out if it will be thawed enough to cook on Friday, so tonight may involve some defrosting in the sink.

I'm making spaghetti meat sauce with noodles and a new salad. Chopped Kale, Brussel sprouts, green onion, cranberries, feta cheese, sunflower seeds or pecans. With homemade Orange vinegarette dressing. I had the salad last week at a restaurant and it was so good.

We are having tortilla soup made with stock from our thanksgiving turkey carcass, and some leftover turkey. The stock smelled so good when it was simmering, I'm really looking forward to the soup!

Thanks for the reminder. I need to get the leftover pot roast and gravy out of the freezer. Going to saute mushrooms, dice the meat, heat it all in the gravy and serve it over egg noodles. Plus whatever veggies I can scrounge up. Maybe a salad instead.

Turkey and dumplings made with the turkey stock from the carcass and whatever gravy is left.
Then we are officially done with the turkey. Other than a few sandwiches and leftovers on Friday night, this is the only meal I've made with the turkey. But the way my family is crying for mercy - "no more turkey" you'd think I'd done turkey 80 ways since Thursday!
Ah well to bad for them. I will have some stock left over to can though so I'm happy about that.

No clue and right now nothing sounds good. Chances are it will be something like garbonzo bean curry and rice. Not very exciting but I didn't get any meat/fish out of the freezer. I also have a 500lb Costco bag of stir fry veggies - maybe I'll cook up some of that on the side.

Baked chicken/green beans/new potatoes with Italian dressing mix (dry). Something I found on Pinterest awhile ago, but we have leftover fresh green beans from Thursday and I want to use them before they rot. I'm sure I will love it, DH will hate it and DS will eat it and say "it was okay, mom". LOL.

I started the 21 day fix today and I struggled with making my dinners kinda overlap a little with the family meal. I think tonight kinda works.
Tonight we are having: Boys - fish sticks and french fries DH - grilled tilapia and french fries me - grilled tilapia and roasted sweet potato chunks

I pulled some spaghetti sauce that I made a while back out of the freezer, and will cook some Italian sausage and pasta to have with it. (And if I didn't have the home made sauce, I would totally be cracking out a jar of Prego - sometimes it irks me when people have to qualify everything with "home made" or "fresh")

I have a meeting tonight at my daughter's school so I made sweet and sour meatballs in the crockpot. I will put some rice in the rice cooker before I go and that will be dinner when we get home.

Finished my first 21 Day clean eating challenge and today starts Round Two...so it's chicken Italian sausage with roast butternut squash, zucchini, mushrooms, and bell peppers plus baked sweet potatoes and quinoa.

Dd has chorus practice after school and dh has errands to run. S wanted an easy, quick dinner.

My family is not really complaining about the turkey. As for me, I just ate my third plate of turkey and the fixin's - Friday, Saturday and today. I could seriously keep eating this. I love turkey.
