I agree with the above. My mom only made certain dressy, fussy cookies at Christmas. Sugar cookies cut using Christmas shapes. Cookies that use ingredients that you would not normally have on hand, such as glazed cherries, baking ammonia, and coloured red & green baking chips. Ohhh....what is baking ammonia? I haven't ever needed to use such a thing before?? Baking ammonia is a leavening agent that was used before they made baking powder.

I do make chocolate chip and oatmeal raisin as part of my Christmas cookie baking, but I wouldn't define them as Christmas cookies. As others have said, things that are more involved than a typical cookie. For example, I make a pistachio cranberry icebox cookie that is a labor of love for my sister.
