I agree with the consumable option. Maybe a gift card to a nice dinner place or fun food option.

I second Stonewall Kitchen gifts. I personally love their red pepper jelly. I too a bar of Philadelphia cream cheese and serve with crackers and always a big hit. I bought a couple of their gift sets this year for hard to buy people on my list.

Wax amaryllis: I plant them in my garden when spring comes. I’ve wondered about these, how do you grow these? They’ve confused me 😀 I’ve forced a lot in water or planted in a vase. As for the original question, I’ve given a lot of soup and marinade packets.

We've given DH's parents, who have downsized recently, food gifts for the past several years. We live in BBQ country so we've sent BBQ, sausages, cheese, this year we sent Swiss Colony (quick breads and bridge mix).
I've tried to get DH to make a donation to a veterans group in his dad's name (both DH and FIL are veterans) but he refuses. I was very close to telling people to just donate to their local animal shelter in my name if they want to give me a gift this year. So, if there is an organization they care about perhaps a donation in their name.
ETA, a friend gave me a wax amarylis one year for Christmas and it was wonderful! DS who loves plants thought it was very cool and I loved that you don't have to water it.

As for the original question, I’ve given a lot of soup and marinade packets. You just leave it out and let it grow. It requires nothing. They’ve been soaked in water before covered in wax, so they don’t need any water or dirt. Sometimes they can be planted outdoors after they’ve bloomed, but sometimes the basal plate has been cut off (depends on how it was prepared) and you won’t be able to regrow it. I’ve given them to people who do not have green thumbs and tell them to toss it when it’s done blooming.

I had a second thought on this subject. All my advice (and I presume others’ too) about consumables was based on thinking about financially comfortable older people.
If the recipients are financially insecure, that’s different. Then maybe something like a throw or another useful gift might be a good idea. Some kind of food gift still works great, too.

Consumables.
My Dad is 72. Spends a ton of time working doing odd and ends around the yard. Bought him seeds to attract bees/butterflies. (We also used to have bee hives if that makes a difference).
I also got my parents chocolates to snack on.

I would like some fresh fruit. A case from Florida is far too much for one or two people... Just a few good pieces.
Depending how much you are spending and availability... Walmart plus is $98 a year. That's free shipping of anything, no minimum.. OTC, socks, towel, underwear... They don't have my tea bags of choice in the stores so they ship them at no cost.
Free delivery of groceries plus over $35. But the grocery delivery can include many many things from all over the store... OTC, bandaids, to craft paints, batteries.... Paper goods... I have had better luck with Walmart fruit and veggies then from Amazon Fresh. I suggest to friends, Walmart is worth it even if only for all the heavy stuff, cases of water, flour, laundry soap. Let someone else load it and carry it to my door. There are times delivery get overwhelmed and they cancel, not so good, but I stock up on shelf stable, so all is good. Just be careful picking substitutions...
Walmart does not inflate prices as many other stores do!!!!
I sent stuff from Walmart for my grandsons(adults) for their stockings as I found them online.
If you are a plus member you can also send a grocery order, but they must have availability..

Please don’t do the ‘warm, cozy throw’. Believe me, those of us in our 70s already have plenty. Since you say you don’t know them well I would suggest a fruit basket or something from Harry and David. . I see this suggestion thrown out all.the.time. We are in our later 60s and have more than enough quilts, blankets and throws to last us the rest of our days. Most of my friends and peers are in the process of downsizing and major decluttering. We just don't need or want more 'stuff'. If you must give a gift, please consider something consumable. This is true for people in their 50’s too. I have a HUGE pile of stuff that needs to be dropped off for donation. If there’s anything we actually need we’re at the stage of our lives where we want to choose it for ourselves. If they enjoy watching anything on one of the streaming services, a 6-12 month subscription extension might be a good gift in that price range. We subscribe to Disney+, Hulu, Amazon Prime, Paramount+, Discovery+, I don’t even know how many because DH adds them when there’s something in particular he wants to watch and then we never unsubscribe. Also, if you’re ordering online don’t forget to check and see if there are any rebates for what you’re ordering on Rakuten! There are a lot of good rebates for streaming services among other things at this time of year.

How about a waxed amaryllis bulb. You don't have to water it or anything. When it's done blooming, you toss it out. I've given them in the past and they've been well received. Thank you for this suggestion! We don't technically exchange gifts with our good friends out of state but then every year she sends us a box of homemade goodies and she's a wonderful baker. I'm always looking for something to send to them but we are at the stage we don't really need anything. This will make a great gift for them!
