Dumb question of the day: I’ve read some of you making taco salad. This seems like something that I would love. Do you make it as a main dish or is it a “salad?” I know you got a lot of yummy responses, but was going to add many people, including restaurants served taco salads in a flour toritlla shaped into a bowl and deep fried. I think because of the deep frying, they slowly became obsolete and people resorted to making their own by baking them by moding them over an oven safe bowl.
You can still buy them in the stores, but are kind of hard to find. Taco BowlsOr if you're inclind to have another kitchen gadget, the Baked Tortilla Bowl Maker. Bowl MakerI know some people have used cooking spray and put corn tortillas in these bowl maker machines as well.

I forgot to mention avocado/guacamole in my list, since I hate avocado. But it’s pretty necessary for most people. littlemama: oooh, I love the idea of mixing refried beans with the ground beef. Thank you. That’s what I’m going to do next time.

I forgot to mention avocado/guacamole in my list, since I hate avocado. But it’s pretty necessary for most people. Joining you in the avocado hate. Living in Texas people find that to be really odd. I’ve been known to tell a server I was allergic to them just to avoid the comments! 😂

PLurker...that photo is GORGEOUS! We haven't had a good snow this year, just a stupid, one-inch one that melted too soon. I LOVE the beauty of a white-covered yard! I ESPECIALLY loved snow with Meaty and Sophie! Today is the first day of Spring Break for me! Ohhh, enjoy every SECOND! He's feeling much better this morning. They actually left him alone last night for the most part and let him sleep! A rarity in a hospital setting. Great news he's better! And, they LET HIM SLEEP !?!?! That is awesome! Maybe we should all request that! Then comes the hard part, having him learn to pace himself until he fully regains his strength I hope his recovery goes very well! They said they wanted to let me know before the weekend that everything was fine and it was benign Yipppeeee !!!!! I'm upset right now and need to get over it, so I'm taking deeeep breaths. I desperately want a dog, but DH isn't ready. I'm trying to be understanding and "adult" about it, but it's hard! Honestly, I'm in a HUGE amount of pain today, so that just exacerbates all my emotions. We're having our usual take-out pizza tonight, and I usually make a salad or we just have crudites.

Thank you. That’s what I’m going to do next time. I started doing that when I made tacos to get more fiber in my family's diet. Now they complain if I dont do it. They kind of melt into the beef so it isnt as noticeable.

I think Sam's has 4 count of the large ones for about $1 a piece as well.

The problem with a bag of them is that they all get ripe at the same time. The ones at our Costco aren't very big. I'll have to look at the ones at Sam's. The sad thing is that when we lived in the Bay Area, soon after we got married, we had 2 avocado trees in our backyard that produced the biggest and best ones I've ever tasted. We would deliver bags of them to all our neighbors. When we sold, the idiot buyers cut down most of our 18 fruit trees. The neighbors were aghast. Especially about the avocados!

I put mine in the refigerator. I take 2 out at a time and they seem to be okay. Once in a great while I will end up with a really ripe one but will usually just squish it up and make guac with it.
That is horrible about what the new neighbors did to your trees! I have a sister in Escondido and she has 2 avocado trees that do really well. One year they were even delivering to local restaurants. Then one year, I think it was when there was the avocodo trees that got diseased, their 2 trees were wiped clean by theives one night. Didn't leave a single avocado.
She has brought a suit case full to share with all the family when she comes to visit.

DSO asked what we were having for dinner. I told him that I had planned to try making the pineapple rice dish from a Thai restaurant we've been going to lately. Then he mentioned that he was thinking we could go into town to our favourite restaurant, for some pork belly. Ugh, why didn't you just say that instead of asking what I was cooking? So I decided that as well as the pineapple rice, I would make the pork belly dish from our favourite restaurant (I have the cookbook). Pineapple Fried Rice (She forgot to mention when to add the pineapple in the recipe! And looking at my photo, it looks like I forgot to put it in, but you'll just have to trust me, it's in there. ) Pork Belly with Chilli Caramel, and Apple Slaw with Nuoc Cham (The cookbook uses a slightly different recipe for the chilli caramel and the apple slaw dressing / Nuoc Cham)

Good Evening!
Just finished dinner. DH fixed bacon wrapped beef tenderloins on the grill. They were delicious.
All the talk about taco salad has me thinking that will be on the dinner list this week.
I’m glad so many of you have received good health news this week!
I’m heading to the scrapbook room to work on some Easter cards.

Thank you. That’s what I’m going to do next time. I mix black beans, corn, a can of that stuff leannec talks about whose name is escaping me,olives,green peppers and diced tomatoes to the meat. I’ll eat it side dish or main dish. I also put it on top of nachos. The wind is insane today. I’ve been working on unpacking, refinishing a side table and couch shopping. Grabbed a pizza. Now dd 2 & I are watching Luke. Glad to see the good news today.
