My mom is interested in going somewhere where there is hiking and nature. We might be spontaneous and go this week so the kids can be home with our puppy while I’m gone (they have spring break). So, it might need to be within driving distance unless flights are cheap. I live in MN and she lives in NW Iowa. Where would be some good places to go that have better weather than we do (like grass and no snow)?

seattle has some great lowland hiking.. whidbey island, deception pass park, olympic national park beaches, look at washington trail association.. weather may be too cool for you.

MN and Wisconsin have fantastic hiking trails and gorgeous waterfalls! My daughter lives near Hayward WI and we find new hiking trails every time we visit there are also a couple of caves two!

I'm in central Illinois, which would be driving distance for you both. Today, it feels like winter has finally left us and our weather is 60ish and mostly sunny with a breeze. Should be not much rain this week and highs in 50s. On a weekly basis, we hike Allerton Park outside of Monticello. Turkey Run State Park in Indiana is another favorite of ours for hiking and nature.

UP Michigan. Porcupine mountains. It's in the western half of the UP so not too far from you. We've also done northern WI, on the other side of the MI border.

Almost anywhere will have hiking and nature. Why not look at flights and go from there. You may be pleasantly surprised at how fun it could be!

I just checked, and it looks like Colorado Springs is going to be nice this week and it doesn't look like there is snow cover at lower elevations. A lot of good hiking there. Branson, MO is a little closer and might have some potential.
Otherwise, I agree with TN, but that is even farther than CO from here at least...maybe not for your mom though.
Also, as your mom knows, once you hit the border, there isn't any snow right now.

She said she thought it was too short notice to fly somewhere. We had decided on starved Rock state park in Illinois but the weather doesn’t look great this week. I think we will end up waiting to go somewhere in early May. There is still a lot of snow where I live so anywhere in a northern state would likely not be great at this time of year in terms of ice and mud. We want to go somewhere with nicer weather.

Yeah, you aren't going to have any luck without snow within eight hours or so unless you want to stay in Iowa--meh.
Hopefully, you get to go in May.
FYI: I have seen some cheap flights to CO, Las Vegas, Boston and San Diego from MSP. Nothing works for me right now, but if dates are flexible, there have been some really good deals to those locations recently.
