I love the food pod parks in Portland. Everyone can find something they like and there are many types of food to entice you to try new things.
Where I live I typically see a lot of food trucks only at special events or at breweries.

We have lot of chip trucks or chip stands. They sell french fries and usually hot dogs and hamburgers. Some are big into fish and chips as well. They are often on roads going to cottages and lakes. Most of them are not trucks at all, but little food shacks. We also have the trucks that go to fairs and gatherings and the food trucks that will come to company parties during the summer in the company parking lot, or come to a park. They will specialize in one thing like pulled pork or grilled cheese sandwiches or sausages or maybe have a variety.

We do not have pods here. We have food trucks and you can have them come to your house for parties and stuff. That's pretty popular. I am on Long Island. In the city of course, we have little food carts on the corners.

My 2 DDs live in Portland, OR and we LOVE going to the food truck pods when we visit out there. I haven't been to the large one you showed pics of busy, but I there's a smallish pod with 5-6 stationary trucks, open seating, etc. that is walking distance from oldest DD's house, so we usually go there. I love it! In my area (DC metro area/Northern VA) there are food trucks galore. There aren't many specifically in my city except during holidays or other special occasions, and sometimes for specific office events. But they're all over DC (of course) and quite a few in Arlington (nearby me). My pool has them come in a couple evenings a week in mid-summer when people want to stay late at the pool and not have to go home and cook dinner first. (We joined the lazy people pool LOL.) In VA some of the wineries have food trucks too (the fancy food trucks, not the DC hot dog and burrito vendors LOL).

Food trucks are super, super common here. I go to breweries a lot and every one that doesn't serve its own food has food carts. I can only think of two stationary ones, both the same restaurant, and they are open at two breweries on the weekends.
Sometimes my neighborhood gets a food cart.
I follow several that post where they are going to be every day. Sometimes they are at a bar or store but often times they are at a business/industrial park or parking lot.
We also have several food truck festivals a year.

I’m in a town of 20K outside of San Antonio. I’ve never seen any food carts or pods. We do have food trucks. A few are on their own and mostly stationary. There is also a small place where several gather with minimal outside seating. And a larger place centered around an indoor/outdoor seating area with a beer bar. Maybe wine as well, we didn’t check.

I saw those when I was in Portland in July. I've never seen them like that where I live in the DC area.
On a side note, I really liked Portland!

In LA we really run the gamut. We have people selling tamales out of shopping carts, we have street dogs with these little propane gas tank/sheet pan rigs which are probably highly dangerous, we have food trucks in busy areas like DTLA and around bars and what not like everyone else. There are even fruit carts. Haven't seen any pods out here though.
