Definitely Chicken Piccata ... look up a recipe on allrecipes.com or Pinterest ... perfect if you love lemon and capers like me!

Chicken salad. Cook, shred, chop or if you have a grinder, it all works.
I don't have a favorite recipe. I usually just use what I have available and so it varies from time to time, but tyically use celery, relish, onion, frozen peas, or if I want a sweeter verions, grapes, nuts, and use cool whip with a little mayo for the dressing.

We had this tonight - I use significantly more curry powder but otherwise the same. It's a family favourite here and was one when I was growing up as well.

This is in our rotation all summer long. I keep cooked and diced chicken in the freezer and take out what I need for lunch or dinner. I also keep a mason jar of the curry dressing premade, as well as roasted cashews. We use tortillas, so it’s a quick and easy summer meal. Hint—curry is a spice blend and each manufacturer will have their own balance of spices. My favorite was one that I used in Belgium, but I’m almost out of that. McCormick also makes a good blend. Her recipe calls for 3 tablespoons of curry powder, but I start with 2 if I haven’t tried that brand before. It’s easy to add more, but you have to make more schmooey if it’s too spicy!

Chicken bruschetta, chicken caesar salad wraps, chicken kebobs with mushrooms, green pepper and red onion, chicken fajitas, chicken brushed with ranch dressing, then dipped in a combination of corn flakes and cheddar cheese and baked for 30 minutes.

I dated a guy a couple of years ago who made the best stuffed chicken breast! I wish I had gotten his recipe before I broke up with his narcissistic ass, but I know he made it with apples. I have no idea what else he threw in there. It was really tender and juicy, and SOOOOO GOOD! I wonder how he would be if I called him just to get the recipe? He will probably take as an invitation to start up again. Check out recipes for stuffed chicken! ETA: So I had to see if I could find a comparable recipe because now I really want to make it! I don't think this is the right recipe, but it's close. I know he had apples and I believe stuffing mix. RECIPE

i like to make blackened chicken, then i can use it in tortillas or with rice, or on a salad.
butterfly your chicken breasts pat dry and heavily coat with paprika, onion salt, garlic powder, salt, pepper. anything else you want to add, really, but those are my go-to. place in hot skillet with 2 T of oil cook about 4 minutes a side. add more oil if you need.
they are really yummy and have so many uses.

COOK IN THE CROCKPOT AND THEN SHRED AND FREEZE IN 1 OR 2 CUP INCREMENTS FOR RECIPES THAT CALL FOR SHREDDED CHICKEN.
PUT IN CROCKPOT. POUR CHICKEN GRAVY OVER AND COOK. SHRED CHICKEN AND PUT BACK IN THE POT. SERVE OVER MASHED POTATOES, BISCUITS OR EGG NOODLES

I love a good chicken salad! One of my favorites is to make chicken salad with a little basil, then make a panini with the chicken salad and jarlsberg cheese. The bread has to be good though.

I also just do fried chicken-cut the breasts nice and thin, coat in egg mixture then breadcrumbs of choice and fry in oil.
An easy way to prepare: melt some butter and garlic, brush over chicken breast, sprinkle with shredded cheddar and panko breadcrumbs, a little more melted butter with garlic on top, bake til golden brown and crispy on top

Mississippi crockpot chicken. You can find recipes all over the web.
Once you shred the chicken, it is great in salads, wraps, and sandwiches.
When serving a crowd, I make this and set out with rolls or slider buns with a variety of sauces: buffalo, bbq, blue cheese, honey mustard, etc.
It's a very low-key flavor profile, so it is very versatile and works in lots of diahes, but you can add more spices as desired.

lemon pepper chicken
(recipe online)
put thin chicken breasts in pan. I use glass pan. squeeze a lemon --juice over chicken sprinkle garlic powder, lemon pepper and paprika on top. bake 350 for 45 min.
good and easy peasy

If they are fresh chicken breasts take the tenders out and put into a freezer bag then into the freezer.

My favorite
Onions and Rice, topped with chicken breast
(I usually cut breast into strips so the meat is not so thick and will cook thoroughly)
2 cups sliced onions Melt 1/4 cup butter and stir with the onions so that all the slices are covered with the butter. Put in large casserole dish.
Brown each breast slightly so that the meat looks browned, (not so raw) Set aside.
1 cup uncooked rice (more if your family likes rice) Boil 4 cups water, put the rice in the boiling water and boil for 8 minutes. Drain rice and add to the buttered onions. Stir so rice, butter and onions are mixed well.
Put browned chicken atop the rice and onions.
Cover and bake at 350 for 45 minutes. Uncover and bake 15 more minutes.
Serve.

Unfortunately, my husband hates chicken and it's my favorite protein so the kids & I eat a lot of chicken. My chicken salad recipe (chicken with 2/3 mayo & 1/3 sour cream + dill + s & p), faux-fried chicken (breaded chicken sauted on the stovetop), our version of Chik-fil-a nuggets that we call Chik-fil-gay Nuggets, sheet pan chicken fajitas, sheet pan Greek chicken souvlaki, apple butter chicken (apple butter + shredded Cheddar), and chicken kabobs with Spiedie sauce are some faves.
