Cold for clothes, hot or warm for linens depending on the items. I have a super basic washer, so no sanitize option. It does cold rinses for everything.

Soap kills germs, so no real need to sanitize. But it doesn’t though. Detergents do not all kill germs. Detergent can ‘remove’ germs physically from the fabric by breaking their attachment to the fabric. IF the conditions are correct, right temp, right space in washer etc. most of the germs can be physically removed down the drain. Do things need to be sterile though (medical exceptions notwithstanding) ?
When we talk about cold, what temp are we talking? I use 30 or 40 degrees mostly I guess.

I wash clothes in cold water. Towels and bedding in hot water.

We wash everything in cold (tap) temperature. Sheets and towels get washed in hot simply because that is what the setting on my machine sets it to. It wouldn't really matter to me if they were washed in cold.

Well I am no help as I wash every thing on warm wash cold rinse, really the only reason is that I never think to change it. Like most things I am unsure of, I just plop myself in the middle and cruise until something pushes me one way or the other. Nothing has pushed me yet.

I do my clothes on a 30C wash and towels and sheets get 40C. I think I could go down to a 20C wash, but I am a creature of habit. I do a machine clean when it tells me to and that is a higher temperature, I think 60C

The dryer can kill of the majority of the germs then.

Warm wash/cold rinse. I have literally no idea what my husband does with his clothes. My laundry is treated the same. Underwear and socks get tossed in with clothes. Towels have own wash. Linens have their own wash too.

The dryer can kill of the majority of the germs then. Your home & laundry are fine, when people aren’t sick. We don’t want good microbiome killed. Thats why sanitizers should be separate from other cleaners.
