I make the same things over and over and I'm getting bored. Pinterest brings up nothing really new for me so I'm on the lookout for some good recipes so share what you love!

Caramelized onion and vegetable pasta.
Start to bring a pot of water to a boil.
Crisp up some bacon in a large skillet. Start on cold so you get a lot of bacon fat.
Drain off most. Add thinly sliced half moon onion pieces and begin to caramelize. When almost there add favorite vegetables with a little butter, salt, pepper. I like to add broccoli, asparagus, matchstick carrots, and sometimes slices brussel sprouts.
Add butter as needed.
Once vegetables are to your liking, add drained pasta. Add in a little cooking water and mix well. Season. Sprinkle on some grated Parmesan. Mix well.

This can also be made with left over turkey from holiday meals.
Chicken Casserole 1 12-14 oz bag of Pepperidge Farm Stuffing Mix (Choose to your liking from several varieties.) 1 Cup Water or Chicken Broth 1 / 2 Cube Melted Butter/Margarine Mix together and set aside.
2 1 / 2 - 4 Cups Cooked Chicken (Deboned & cubed.) Some people like a more meaty casserole, so use your discretion on the amount of meat. 1 / 2 Cup Chopped Onion 1 / 4 Cup Chopped Green Onion Tops 1 / 2Cup Mayonnaise/Miracle Whip 1 / 2 tsp Salt Some people add a small bag of frozen mixed vegetables for variety. Mix together and set aside.
2 Eggs 1 / 2 Cup Milk 1 Can of Cream of Mushroom Soup May also use to your liking Cream of Celery or Cream of Chicken Soup. 1 / 2 Cup Shredded Cheddar Cheese (Or any other cheese of your choice.)
Grease a 9x13 baking dish. Spread 1 / 2 stuffing mixture in bottom of baking dish. Slightly pat in place, but do not press hard. Spread chicken mixture over stuffing. Spread the remaining 1 / 2 of the stuffing mixture over the chicken mixture, again patting in place, but not firmly. Beat the 2 eggs and 1 / 2 Cup of milk together and pour evenly over stuffing. Refrigerate for at least 1-2 hours. (Can be refrigerated up to 2 days.) Spread undiluted soup over top of stuffing. Bake at 350⁰ for 35-40 minutes. Sprinkle Cheese over top and bake an additional 5 minutes or until cheese is melted. Let sit 10-15 minutes before serving. Feeds 6-12 people depending on size of squares served and additional menu items included in the meal.

Another favorite is flauntas.
I use GF flour tortillas, thick mashed potatoes that are seasoned with onion and garlic powder, salt, a bit of pepper, and vegan butter. I add cheese to dh's and mine, not to dd's.
I fry in shallow canola oil. Drain on cooling rack over paper toweling.
Serve over shredded lettuce with black beans and rice. ETA I love to pour some red enchilada sauce over mine.

I don’t have a name for this but saw it on a Blackstone group on Fb.
Sliced smoked sausage, onions, mushrooms, browned in a little oil. Add a couple handfuls chopped spinach and let it wilt. Add a bag of frozen tortellini pasta. Cover and steam. Add Sweet Baby Rays Parmesan garlic sauce right before you take of grill.

We enjoy this easy one pot recipe. The only change we make is omitting the wine.
One Pot Creamy Sausage Pasta
INGREDIENTS 2 tbsp olive oil 1 red pepper, chopped (about 1 ½ cups) 1 medium onion, chopped (about 1 cup) 4 cloves garlic, minced Kosher salt and freshly ground black pepper ½ tsp ground fennel or 1 tsp fennel seeds (optional - see note below) ¼ tsp red pepper flakes 1 lb ground hot or sweet sausage (or a mix of both) ¼ cup dry white wine 16 oz marinara sauce 6 tbsp heavy cream 8 oz short pasta shapes, like penne 4 cups water ¼ cup grated Parmesan cheese ¼ cup chopped fresh basil
INSTRUCTIONS Heat the oil in a large skillet over medium-high heat and saute the peppers and onions until they start to soften, about 8 minutes. Stir in the garlic, fennel, red pepper flakes, and a good pinch of salt and a few cranks of black pepper. Crumble the sausage into the skillet and cook with the peppers and onions until browned. Pour the wine into the skillet and scrape up the bits on the bottom of the pan. Pour the sauce and 3 cups of water into the skillet and then stir the pasta into the mixture until well-combined. Bring the liquid to a boil, reduce the heat to medium-low, and cover. Allow the liquid to simmer, stirring occasionally at first and more frequently towards the end to prevent the pasta from sticking, for about 15 to 17 minutes. Every 5 minutes or so, stir in a little of the remaining cup of water. If the liquid starts boiling over, reduce the heat to low. When the pasta is cooked through, stir in the cream, Parmesan cheese, and most of the basil (reserving a little for garnish). Allow the cream to heat through for 2 minutes. Season with salt and pepper to taste. Allow the dish to cool for 5 minutes, sprinkle the remaining basil over the top, and serve.

Asian Chicken Salad 2 small bags of coleslaw mix 4 cups of rotisserie chicken- finely chopped 1.5 cups toasted sliced almonds 1.5 cups of dried cranberries 3/4 c of red onion, finely chopped 4 Tablespoons honey or brown sugar 4 Tbs minced ginger 2 tsp toasted sesame oil
Layer the cabbage in a large bowl with chicken, almonds,cranberries, onion, seasame seeds. Add mandarin oranges (opt) Combine olive oil,balsamic ving, soy sauce, honey , ginger, And Sesame Seed oil in a blender. Add 3 tbs of water. Blend until smooth Lightly pour the dressing over the salad. Toss and then serve

I copycatted this from SweetGreen's miso salmon bowl. No real recipe except for the dressing. Also works fine with chicken or pork. I love, love, love the recipes on I Am Homesteaders website. (Amanda, she used to be a pea!) 1. The garlic butter steak bites are amazing. 2. I will probably make the Cajun potato soup today. 3. I also make this: season boneless skinless chicken breasts or thighs. Bake. Mix a block of cream cheese, shredded cheddar, green onions and diced jalepenos. Take chicken out right before it's done. Slather the cream cheese mixture all over the chicken. Bake for 10 more minutes. 4. Split chicken breast. Stuff with herbed cream cheese. Wrap with bacon and secure. Bake. 5. Taco chicken bake: Layer rice. Add chicken bouillon. Season chicken breasts with packet of taco seasoning. layer can of corn (drained) or even frozen (cooked) can of black beans (drained) can of rotel with green chilis Bake Add shredded cheese of choice at the end. 6. Tuscan salmon or chicken (search for recipe) 7. For amazing Chinese food, go here. Anything and everything from Marion's Kitchen, and RecipeTin Eats (which is where smasonnc 's delicious recipe is from). Everything I have ever made from Marion's site has been a big hit with everyone. I would be here all day if I had to list all of my favourite recipes from there. This is one of our favourites, and I am making it tonight when DD and her partner come over: Chicken Schnitzel with Creamy Miso Mushroom Sauce. The recipe shows steak as the meat, but DD doesn't eat red meat, so I always do it with chicken. This is another one that we love: Jalapeno Popper ChickenAnd another of our favourites, that I made for DD and her partner last week: Spinach and Mushroom Gnocchi in a Creamy Garlic and Smoked Parika Sauce. It's really quick and easy. This is another one that is really good, and has been popular with the Peas over the years. In fact, I think Amanda was originally a Pea on the old site. Spicy Sausage Pasta. I need to stop here, otherwise I really will be here all day. If you have any particular food or cuisine that you really enjoy, let me know and I will share some of my favourites.

we like Quick Red Beans and Rice.
1 ring of smoked sausage 1 lb cut up chicken breast or shrimp (your choice) 1 white onion, chopped 1 green pepper, chopped garlic to taste I can kidney beans, undrained Cajun Seasoning (we love Penzey's)
Brown the chicken or shrimp in a hot skillet with a tablespoon or two of cooking oil, season with salt and pepper and cook until done. Remove from pan. Slice the smoked sausage and brown in the skillet. Add the chopped onion, pepper and garlic, cook until tender Add the can of red kidney beans with the liquid Season to taste with the cajun seasoning.
We serve over white rice I make in our instant pot.
Sometimes I add more sausage, chicken or shrimp to up the protein in the meal.

No, they aren't. I used substitutions. Sub corn starch for potato starch (but there are lots of other options too) Sub all-purpose flour for corn flour (again, lots of other options) I thought the recipe turned out amazing with these subs. I don't really want to buy some off-the-wall ingredient that I've never needed for decades when a simple sub that I have on hand will work perfectly fine. LOL. Lisa

This sounds so good! I've never heard of potato starch, and never used corn flour either. Are those must haves for this recipe? Cornflour is what you would call cornstarch, which I would have thought was a pantry staple? Otherwise you could use plain / all purpose flour. (But cornflour and potato flour are better as a thickening agent than normal flour IMO.)

I amended this pork chop recipe (https://thesaltymarshmallow.com/slow-cooker-pork-chops/) for us for dinner this week.
I couldn't find the ranch mix (mostly because I didn't want to go to another store), so I used Italian breadcrumbs and seasoned salt, and used it as a rub of sorts for both sides of the boneless, slightly thinner than called for, pork chops I bought. I doubled the broth and gravy mix, and also used cream of mushroom instead of cream of chicken.
Turned out pretty tasty, so I was proud of my substitutions.
