Wednesday - hamburger soup, plus my rookie attempt at potato pancakes with leftover mashed potatoes (they were mid) Thursday - Costco ravioli, jar sauce, homemade French bread, baby carrots Friday - chicken tacos with HEB pre-marinated meat, butter tortillas and toppings

I made scones a couple of weeks ago and froze them so right now those are my breakfasts. I also keep a stock of soups in my freezer and now that the weather is cooling off I'm eating a lot of soups. So the past three days have been: Day 1 Breakfast: raspberry scone Lunch: leftover enchiladas Dinner: Panda Express Day 2 Breakfast: raspberry scone Lunch: Leftover Panda Express Dinner: Potato leek soup Day 3 breakfast: raspberry scone Lunch: Apple, crackers, salami, cheese Dinner: Weeknight Lemon Chicken & green beans I've been snacking on ranch flavored cashews from Trader Joe's and Pringles along with cherry tomatoes and strawberries from the garden. This weekend I'll be making copycat Chipotle bowls with beef birria (frozen from when I made a huge batch last time), cilantro lime rice and various toppings from my garden including peppers, onions, tomatoes and corn salsa. Sunday I'm making pot roast in the crock pot. Those two things will give me lots of leftovers for lunches and dinners throughout the week.

Tonight, we had General Tso's Chicken (Instant Pot) with rice and cauliflower.
Last night we had rye bread pastrami sandwiches except pastrami was $13 a package, so I subbed corned beef. It's like making a grilled cheese except it has provolone, horseradish sauce, and I think mayonnaise (DH makes it...) and rye bread instead of white bread, and we had roasted red potatoes.
The night before we had Ina Garten 5 cheese pasta, but I usually only use four cheeses... and garlic bread.
ETA: breakfast is usually toast
lunch has been a tuna sandwich the last few days.

Monday was oven baked herb chicken with braised green beans and baby red potatoes, cranberry sauce, and homemade muffins - apple cinnamon that are egg free and coffee cake with streusel topping that have egg. Both are also GF and lactose free (and soy free and nut free, and vanilla free).
Tuesday was tacos and tostadas with black beans, sauteed red onion and bell pepper, shredded iceberg lettuce, tomatoes, salsas, shredded Monterey jack cheese, and Mexican rice on the side.
Thursday was baked potato and muffin for DD and vegetarian lasagna soup for dh and I. Along with muffins and side salad.
I skipped Wednesday as that is FIYS night due to dd's infusion.
Tonight was baked potato for me and dd, and soup for dh. Dh and I are feeling our flu vaccines.
ETA: breakfast one day for me was an apple and cooked bacon, another day a bagel with just butter, and another muffins.
Lunch is left overs or salad or snacky like stuff (cheese + crackers, apple slices, rolled meat, chips).

Breakfast - either porridge or berries with Greek yogurt, nearly every day. Lunch is either leftovers from dinner, soup with toast or a bread roll or something quick like an omelet or scramble with vegetables. Dinners this week have been Take out Indian Leftover T/O Indian Tray bake of chicken thigh and mixed root vegetables, tossed in Greek seasoning Cevepcici ( middle eastern skinless sausages) in pita bread with salad and hummus Korean fried chicken with coleslaw Baked salmon with spinach in a dill cream sauce on brown rice
Apart from the Indian take out, all home made, though using some pre- prepared ingredients ( frozen chicken bites, pre-shredded coleslaw mix)

Breakfast is pretty much always banana for me, porridge for DH.
Lunch is usually Ryvita or rice cakes with toppings such as cheese, smoked salmon, nut butter and jam. DH has salad at work.
Dinner: - air-fried salmon with broccoli and "dirty rice" - sausage and lemon bean mash with peas - "mac uncheese" (cheeseless version made from rice flour and nutritional yeast), with spinach and leftover chopped sausages

We each do our own breakfast. Smoothie and bran cereal for me, a more traditional egg, bacon breakfast for DH.
Lunch is our main meal. Wednesday: We were on the road for DH's work and I made homemade chicken salad. I picked up chips and chocolate chip cookies from the grocery store to go with it. Thursday: I'd made chili and cornbread on Tuesday and we had the leftovers Thursday. Friday: Bone-in chicken breast with herbs and garlic cooked in white wine, baked sweet potatoes and peas.
Dinner is also on our own. DH does a variety of things, lately a lot of salads. My typical dinner is an apple (cantaloupe in the summer), triscuits and cheddar cheese.
I sneak in some chocolate sometime during the day, usually in the afternoon.

Breakfast:DH does his own thing. I have a cup of black tea and a couple spoonfuls of plain Greek yogurt so I can take my morning meds. X3
Lunch: DH does his own thing. I have a couple ounces of protein, and/or some tabouli, baby carrots and hummus, pickles and olives. Or a salad. Or takeout leftovers.
Dinner:

Much to DS dismay, we had two nights of soup/stew type dinners. Thanksgiving was last weekend for us, so we had lots of turkey, and I had promised not to use the sandwich turkey for a stew. But I made stock on Monday, so Tuesday was a soup from all the turkey I pulled off the bones after making the stock. And I think Wednesday was just grilled chicken thighs and salad. Thursday was white chicken chili that I pulled from the freezer. And last night DH and I went out lol.
We are pretty boring here lol. But I've attempted a few new recipes from my Gina Livy program - a tex mex chicken bake (chicken thighs browned, sauteed onion, peppers, zucchini, then 2 cups of salsa, a cup of corn, cilantro if you have it, add teh chicken back in, top with cheese, and bake until done) SO yummy.

We had a protein bar each for dinner last night. Try not to be jelly! 😂 We’re empty nesters, and I teach lessons from 4-7 Monday through Thursday, so dinner is often something DH can manage. HEB has meals ready to cook that are simple and healthy - we usually choose salmon and a vegetable or chicken and a vegetable. We probably have those twice a week on average. They just pop in the oven. Other days, I might make something I can cook in the afternoon and reheat for dinner after I’m done teaching - soup or a stir fry works well. Or I might pre make a salad. So there aren’t really a consistent three days I can point to, but it’s all pretty low key these days. ETA: OK now I have my groceries here, so I've planned this for the next three days. Tonight - Crispy sheet pan black bean tacos, carrot and celery sticks with salsa ranch. Tomorrow - Sheet pan Italian meatballs like this www.themediterraneandish.com/baked-meatballs-recipe/#wprm-recipe-container-42746 except that I'm using frozen meatballs and then following the rest of the recipe as written. Probably a salad to go with. Monday - Protein bowls from HEB with southwest chicken and vegetables. Typical breakfasts - DH usually eats toast with peanut butter and some fruit. I often skip breakfast and just have a cup of tea, but if I eat it, I like greek yogurt with fruit and granola. Typical lunches - DH often makes a turkey sandwich or will eat leftovers from dinner. I will also eat leftovers, or will just grab a protein bar or put one of those little tuna packs on some salad.

Breakfast is the same for DH & I every day but Sunday: steel cut oats and fruit for both of us, and I also have an egg.
The kids do their own thing on weekdays, even though they are eating the same time we are. They just prefer different foods.
Lunch: We all do our own thing. Yesterday I had a fake chicken salad type sandwich with chickpeas, apples, celery, etc. Thursday I had leftover pasta & veggies, and Wed. I never sat down and had a real lunch, which was terrible, because then I was snacking all darn day.
Dinners:
Wed.: Pasta with tomato sauce, roasted brussels sprouts & broccoli florets, garlic bread Thurs.: Soup & sandwiches, with fruit Fri: Shepherd's pie with an onion gravy, and fruit (We almost always have fruit on the table for meals.)
Snacks: We tend to keep the same things in the house, veggies, fruit, hummus, lower sugar yogurts, seeds & nuts, some dried fruits, salty snacks like goldfish, pretzels, and such for the kids, crackers, cheese, and a box of digestives that DH & I have with our tea once a day, every day.
I tend to also have one sweet snack in the house just for me in case I want some sort of "dessert"--kind bars, a box of plain shortbread, or some home made baked good. This week the kids made carrot cookies using a recipe from WWII. They are very tiny and just barely sweet, which is exactly the kind of thing I look for--something far less sweet than typical American desserts or sweets.

Lol. You most likely won't get inspiration from me. I hate to cook and now that dh is retired I don't feel obligated to put dinner on the table (he never made me feel obligated, that was my own choice since he worked a long day and I do not). So this week... Breakfast -- I rarely eat breakfast, dh eats cereal, or peanut butter toast, or eggs. Lunch -- I usually eat breakfast/lunch mid morning unless I'm at school. If I'm home I might eat cottage cheese and peaches, or leftovers, or peanut butter toast, or a smoothie. Dh usually eats a sandwich. Dinner -- Monday I did a "let's see what I can come up with from the freezer" dinner -- it ended up being pineapple teriyaki meatballs (Costco), mashed potatoes (needed to use up a few potatoes), and green beans (frozen). Tuesday dh finished those leftovers and I have no idea what I had -- probably cottage cheese and peaches which is always my default. Wednesday dd arrived for a friend's wedding and I made white chicken chili in the Instant Pot (Jeffrey Eisner's recipe from Pressure Luck Cooking). Thursday we had Indian take-out because dd requested it. Friday dd had the wedding rehearsal and dh and I ate leftovers (the chili and/or Indian). Tonight dd has the wedding reception and dh and I will have our regular Sat. night pizza (Milton's frozen cauliflower crust, Costco). Tomorrow dd is having dinner with friends, and dh and I will finish the pizza. Unless I eat mine for breakfast. In that case I'll have whatever for dinner. Did I mention that I hate to cook? But even more than that I hate thinking up what to cook.

Dinner is the only planned meal in my house.
Sunday…TJ’s Orange chicken, vegetable fried rice with fresh green beans and carrots. Monday…leftover beef stew Tuesday…ds had hamburger helper and I had a sandwich after a dentist appointment Wednesday…shake and bake pork chops, mashed potatoes, corn, applesauce Thursday…KFC Friday…homemade chicken noodle soup, using a leftover chicken from BJs that I froze a few weeks ago Saturday…taco chicken salads
DS does most of the cooking during the week. I like to make soups, stews and chowders or pot roast with potatoes and veggies on the weekends. He makes great sauce with meat and I make the meatballs. He also makes chili. We recently added a creamy one pot sausage pasta dish to our rotation. For years dd and dgd lived with us and dinners were so difficult to plan. Ds and I are very in tune with likes so it’s easier now.

D/H is retired and always cooking and eating. I do not really know what goes on with his meals during the weekdays but he is always cooking something major.
I do not eat at home during the week. I am an extraordinarily picky eater and my typical week menu at work consists of; Breakfast - Goldfish blend and yogurt Lunch - Egg or chicken salad in a container, not a salad, fruit, marshmallows Dinner - Nothing, do not eat dinner
On weekends I usually have a bowl mix of eggs, rice and sharp cheddar or grits, eggs, hot sausage and sharp cheddar. Occasionally homemade pizza, turkey rice stuffed peppers, pasta with butter and fresh tomatoes and used to eat Borscht but cannot seem to find it since COVID.

Breakfast is usually scrambled egg whites with whole grain toast, sometimes with feta and/or spinach
Lunch is something quick, not usually planned. I keep Costco Barely chicken breasts in the freezer, so I'll make one of those and add fruit
Dinner I try to make somewhat healthy due to my student athlete grandson. He loves shrimp, rice, Costco's orange chicken, homemade pizza, Costco's battered cod in air fryer, burgers, sloppy joes. I can usually get him to eat 1 or 2 bites of a vegetable. He eats a ton of fruit.

Our last three days.
Breakfast - dh always has Greek yougurt. Granola and berries. I had a homemade egg McMuffin. Lunch - dh made turkey sandwiches on sourdough Dinner - roasted salmon, asparagus and mashed potatoes
Breakfast - same for dh. I was grabbing misc things between work calls and ended up with two pieces of string cheese, a handful of nuts and an orange. Lunch - dh made turkey sandwiches again Dinner - pizza and salad delivered from a local place.
Breakfast - same as yesterday for both of us. Lunch - leftover pizza and salad (I always order two so we have extra salad for the next day) Dinner - sautéed Italian chicken sausage, onions, red peppers, broccoli and spinach with red sauce and angel hair pasta.

My breakfast is the same pretty much every day.Lunches I have a few things I rotate so one week will be very repetitive, then the next week I'll try to switch something up but again it's like a day 1 day 2 thing. Dinners I always cook leftovers so once I have had 2-3 dinners I have leftovers 2-3 times.
Breakfast daily: apple, almonds, veggie sticks, toast with peanut butter Lunch day 1: pea soup, clementines, veggies sticks, crackers Lunch day 2: minestrone soup, banana, veggies sticks, crackers Lunch day 3: repeat day 1 Dinner day 1: stir fried veggies, rice, fish Dinner day 2: pasta with home made sauce, lettuce salad Dinner day 3: chicken, potato, steamed veggies

It varies greatly here depending on how insane work here. This week I made sloppy joes, a beef roast, cottage pie, brought home fast food one night and one night of leftovers. Lunches were leftovers for me. I made a batch of chicken and broccoli teriyaki and white rice that the girls took for lunch this week with an apple. I made two loves of banana bread on Sunday so they had that for breakfast most of the week. Tacos in some form or another are a frequent meal. Homemade pizza used to be every Friday night but I’ve slacked off of that. Peanut noodles with chicken and veggies. Lo mein. Butter chicken. Mongolian beef spinoff - beef with caramelized onion. Made from scratch sausage gravy and biscuits. Crust less quiche and maybe some bacon or sausage or cut up fruit. In winter I often make a big batch of soup over the weekend that gets used for easy lunches - chicken noodle, vegetable beef, tomato, beef barley or beef stew. Chicken Thai pizza. Broccoli cheddar soup. Occasionally beer cheese soup. Potato soup. Enchiladas. I think I’m going to make a pot of posole this weekend. Krogers has a decent Birria sauce that I will throw in the crockpot with a beef roast for tacos or quesadillas. I’ll throw a pork butt in the crockpot and let it cook all day and then shred. That meat gets used for bbq sandwiches, tacos, quesadillas, loaded bbq fries - depending on what we add to it after it’s cooked. I generally do the biggest one that will fit in my crockpot and freeze it in meal size portions once it’s cooked. I also freeze soup in Souper cubes then I can use it for lunches or quick dinners later

Pretty much every day I have a bowl of cereal with milk. Usually Honey Bunches of Oats with Almonds. Pretty much every day for lunch I have a cup of some kind of fruit or berries and a container of greek yogurt. Dinner is whatever DH feels like making that day. Most recently we had spaghetti with meat sauce, baked chicken with rice and broccoli, beef tacos with Spanish rice. I don’t like eating dinner leftovers for lunch but DH does that all the time. I would much rather stretch that one dinner into two nights, but then he’ll eat half for lunch so there isn’t enough for all of us to eat it a second night. 🙄

My preference is 2 meals a day, but doctors want me upping my protein and push me to eat three times. First meal is always plain Greek yogurt, blueberries and honey. I might add a date, half a banana, pomegranate seeds and/or granola. Today it was the date, seeds and granola. If I have a middle meal, it might be scrambled eggs & veggies, leftovers or crackers and cheese. Only had a middle meal on Thurs this week and it was leftovers (veggie and chicken sausage hash). If I don't have a meal, midafternoon I'll have an apple with cheese and/or nuts. Dinner is planned to feed four with leftovers. Wednesday was fend for yourself/clean out the fridge. I had a burger DH made the night before and salad. Thursday was grilled rock fish tacos with slaw and toppings (pictured is a shrimp version I made recently) Friday was pasta with a zucchini, kale, spinach and tomato sauce.

My breakfast every day, hasn’t varied in years: 4 corn thins (sort of a round cracker, about 3” across) with cottage cheese (must be Anchor brand; Meadowfresh is too lumpy, you can’t spread it, Tararua is too slimey & revolting). My lunch most days: 2 slices bread, half an avocado, small can of tuna. When avocado isn’t available I use a tomato instead. Dinner for the next 3 nights (I plan our dinners each week):- Lebanese baked chicken . But not as much potato as in recipe. Silverbeet Catalan (I think Americans call it chard), with dried apricots, pine nuts, currants, red onion. Chicken meatballs in a sticky sauce, mashed broccoli, sauteed mushrooms Baked pork shoulder chops, spicy riced cauliflower with frozen vegetables, canned beetroot.

I only plan dinners - beverages are milk or water
Sun - chili and cornbread, grapes, carrot sticks
Mon -chicken curry over rice and topped with chutney, peanuts, raisins, coconut, apple, banana, mandarin oranges, onions, and cucumber (in some combination)
Tues -kielbasa and cabbage skillet, grapes, carrot sticks
breakfast options include cold cereal, oatmeal, farina, eggs, bagel/cream cheese, cinnamon raisin toast, fruit/cheese, protein bar - beverages are milk, water, coffee, or hot tea
lunch options include dinner leftovers, bread/cheese/tomato/fruit, sandwich (brie/cranberry and egg mayo are the most common options), hummus with veggies and fruit, eggs... beverages are milk, water, hot tea, iced tea, occasionally limeade or lemonade
snacks -fruit, cheese, nuts, crisps, crackers, protein bars....there's usually a sweet snack and/or chocolate around also

I’ve had a lot of houseguests the last few weeks, but three days at my house last week we had:
Breakfast: protein chocolate banana PB smoothie w spinach in it or oatmeal with dried fruit and nuts Lunch: a salad with nuts/fruit/crunchy edamame or leftovers or cheese/crackers/fruit Dinner: sheet pan Italian sausage/onion/peppers; tortellini with roasted tomato/fresh basil; NYT creamy spinach artichoke chicken stew
I made a lot of those dinners so we’d have plenty of lunch options.

Breakfast varies each day but is usually oatmeal or eggs. DH did make some really good avocado toast last week.
Lunch recently has been salad mixes with tomatoes and cucumbers and sometimes air fried salmon on top. The day that DH works in person, I tend to just graze on whatever I find.
Dinner is the same Monday-Friday, as we make one big meal and reheat throughout the week. This week is chicken and rice soup. We almost always do salmon, rice, and corn on Sundays, and steak on Saturdays.
Yesterday was different since we spent the day out, so we had food court pizza for lunch and Thai food out for dinner.

Because we all have differing schedules, we don't often have set meal times. I tend to cook several meals at once, to have ready to grab and eat.
At any time, there might be lunch/dinner options such as:
Soup/stew. I regularly make beef stew, split pea soup, ham and potato soup, corn chowder, leek and potato soup, chicken soup. There may also be a spicy chicken and chorizo gumbo available.
Lunch meat & sandwich stuff. Sliced ham, American cheese. Sometimes egg salad, or chicken salad. PB & J is always available.
There is always pasta cooked, and awaiting a sauce topping of their choice. We have pesto, tomato sauce, alfredo sauce, butter & parm to top with. There are also frozen store bought meatballs in the freezer that can be added.
Once a week or so, I make some variation of mac and cheese.
There is usually a casserole or quiche made. I make both chicken pot pie and cheeseburger pie casseroles with Bisquick. Quiches are whatever I have on hand. Sometimes with a pie crust, sometimes crustless.
Cereal, oatmeal, grits, cream of wheat, and bagels (butter, cream cheese, jam, etc) are always available. Usually waffles. Sometimes I make french toast.
