a good peeler makes the difference. I have a cutco one.. peel away from me and use the tip vertically to cut out little "eyes" of the potato.
my peeler is still sharp and at least 20 yrs old. I don't make mashed potatoes often anymore.

Use a peeler and pull towards me with a paper towel underneath.

My parents had one of these and I’d always tease them because…isn’t putting the *flat side against the potato and pushing it away from you* exactly what we are doing with a non-electric potato peeler? 😂. Is the actual pushing so strenuous that we need to electrify the process? katlady just good natured teasing here.

I use an inexpensive OXO potato peeler with a nice, comfortable rubber handle and peel them into the sink. Then I scoop up the peelings by the handful and dump them into the compost bucket (hey, it’s California, we compost everything). Little red or gold potatoes, I don’t bother peeling. I’m the mashed potato queen in my family and I don’t find peeling potatoes to be too much of a hassle. THIS! I use this whenever I have to peel anything!

I still have my $10 Pampered Chef peeler - hand held, all stainless steel.
I peel towards me as well, I never got the hang of peeling away from myself. With carrots I hold them over the compost bin by one end and hold it vertically and run the peeler down and then flip it and do the other end. Potatoes I hold in my palm and peel towards me, usually into my sink.
