Hey friends. I hope you're all having a good day today.
I have the meat from 2 Costco rot chickens - so a lot - and want to make something for my friend whose husband is rapidly falling into worsening dementia. I promised her dinner tonight.
I could make soup but I'm thinking some sort of casserole might be nice. I don't like using canned soups but like a creamy sauce.
That said, I'd love to know whatever you like to do with rotisserie chicken. I often just add it to a salad or make chicken salad with it.

I make Mexican rice, stir fry some peppers and onions and warm the chicken up with a little taco seasoning, add black beans and some grated cheese. then I make burritos, sear them shut in frying pan, put in casserole dish, grate some cheese on top and pop in the oven (cheater burritos)
I also buy jarred butter chicken sauce, simmer the meat in the sauce and serve over rice with naan (cheater butter chicken).
I have also made chicken pot pie, chicken caesar wraps, quesadillas but I don't love stuff that is too creamy, so other than chicken pot pie, my suggestions might not fit the bill.

Put some taco seasonings on it and make enchiladas.
It will make a good soup, too.

YOU are a kind and thoughtful woman! I see it every time I open one of the dinner threads. Do you have a fave store bought green enchilada (tomatillo) sauce?? And thank you EVERYONE for your suggestions. I'm thinking of making something Greek, with lemon and feta and possibly orzo. I just found a casserole that might work well. I know you said no canned soups, but you could probably substitute it with a jar of turkey or chicken gravy.
Chicken Casserole 1 12-14 oz bag of Pepperidge Farm Stuffing Mix (Choose to your liking from several varieties.) 1 Cup Water or Chicken Broth 1 / 2 Cube Melted Butter/Margarine Mix together and set aside.
2 1/2 - 4 Cups Cooked Chicken (Deboned & cubed.) Some people like a more meaty casserole, so use your discretion on the amount of meat. 1/2 Cup Chopped Onion 1/4 Cup Chopped Green Onion Tops 1/2 Cup Mayonnaise/Miracle Whip 1/2 tsp Salt Some people add a small bag of frozen mixed vegetables for variety. Mix together and set aside.
2 Eggs 1/2 Cup Milk 1 Can of Cream of Mushroom Soup May also use to your liking Cream of Celery or Cream of Chicken Soup. 1/2 Cup Shredded Cheddar Cheese (Or any other cheese of your choice.)
Grease a 9x13 baking dish. Spread 1/2 stuffing mixture in bottom of baking dish. Slightly pat in place, but do not press hard. Spread chicken mixture over stuffing. Spread the remaining 1/2 of the stuffing mixture over the chicken mixture, again patting in place, but not firmly. Beat the 2 eggs and 1/2 Cup of milk together and pour evenly over stuffing. Refrigerate for at least 1-2 hours. (Can be refrigerated up to 2 days.) Spread undiluted soup over top of stuffing. Bake at 350⁰ for 35-40 minutes. Sprinkle Cheese over top and bake an additional 5 minutes or until cheese is melted. Let sit 10-15 minutes before serving. Feeds 6-12 people depending on size of squares served and additional menu items included in the meal.

Maybe there are some low sodium versions. Or maybe make a small batch from scratch with some low sodium broth and cornstarch for a thickener.

Several mom and pop restaurants here sell flautas. You can either get potato and cheese, potato, cheese and chicken, or potato, cheese, and pork. Some make flautas with larger corn shells but they are mainly flour. Taquitos are just meat. I make mine with just cheese and potato. One place also sells potato tacos. So mashed potatoes with meat in a crispy shell.

My favourite thing to cook with rotisserie chicken is buffalo chicken mac & cheese. I also like chicken mornay.
Both of those dishes are very creamy and very cheesy and have way too many calories. Sigh. No wonder I can’t lose weight. 😋

My go-to is Pioneer Woman Chicken Spaghetti. Yes, it calls for cream of mushroom soup. I wouldn’t make it any other way (I am lactose intolerant, and cream o’ soups allow me to eat “cream” sauces that won’t leave me sick for the next two days, because there’s hardly any actual dairy in them), but I’m sure you could sub in a real cream sauce if you wanted. I’d be making chicken pot pie with that. Or if you want something lighter, we also like making an Asian Chicken Salad with it (bagged coleslaw, a pack of ramen noodles crushed up, half of the seasoning packet mixed into a vinaigrette dressing). I can look up the actual recipes if you’d like. The Dinner Doctor cookbook (where both of the recipes for these that I use came from) has a whole section of recipes using leftover rotisserie chicken.

Thanks again everyone. Much appreciated. I use rot. chicken a LOT in salads of various types. today I wanted to make a warm dinner for our elderly neighbor and I ended up making a different Greek chicken orzo casserole which specifically called for rotisserie or other pre-cooked chicken and had me cook the orzo separately. That felt like I'd have better odds of success. Last week at DD's I made a casserole full of Tuscan chicken. Lots of great ingredients, and they all looked like they were floating in dirty water once it was "done." Casserole came out great. This is the recipe I used: naptimekitchen.com/greek-lemon-chicken-orzo-casserole/I used 4 cups of the shredded chicken, probably more than I would have had from one lb of breasts?

I like to make a sort of salad with couscous, or some other grain(farro, or quinoa) feta, cucumbers, and veggies that I have on hand. Toss with a vinaigrette. It’s filling, healthy and fast.
