I love them. So much more flavor and not dry and stringy. I too use my kitchen scissors to trim any large pieces of fat that are left.

I prefer them when cooking them in the crockpot. They stay moister. The fat melts away and isn’t really an issue. They fall off the bone and are easy to eat. Chicken breasts in the crockpot can get dry. I still use them in some recipes if the chicken is going to be shredded.

Of course dark meat, the white meat is too darned healthy.
