I think it depends. If she usually remember the correct date, it could be the stress. I would keep an eye on it though as it can be the start of a sign she's slipping. I know my cousin regrets not noticing things like this earlier with her parents & dementia.
I might, next year, have DH check if she remembers the correct date.

If it seemed like a one-off thing, I would shrug it off. Generally speaking though, I don't have any problem telling someone my birthday is actually on the 29th and not the 28th, etc... in the same way I wouldn't have a problem correcting someone if they pronounced my name incorrectly. I would hope that people correct me, especially since - while not VERY superstitious - I'm in the camp that doesn't like to celebrate someone's birthday early.
