I put together a different kit each month. It helps that I know what my style is, and I only buy things that are "me." So I find some sort of inspiration - a color scheme, a kit to counterfeit, a theme, etc. Then I start with the patterned papers and work out from there. I keep all my printed photos in 3-up photo binders, so I just pull what works and make as many pages as I can till the kit runs out. I will say I have become SO much more productive since I started working this way. I have a short e-guide showing the whole process step-by-step. It's free. You can find it here: 10 Easy Steps to a Killer Stash Kit

I'm like you OP and have always struggled with this. So now I do more card making kits. Every time I try to do a layout kit I realize as I'm putting the layout together that I want something on it that I don't have, but know I have at home. Last time I went to a convention I made some card making kits and that actually worked. I'm going to the Creating Keepsakes convention in Portland next weekend so I plan on putting together some more card kits. I can take my dies, stamps, papers and Cuttlebug, which all take up much less packing room then layout kits do

Ugh, this is me too. Pretty much EVERY time. I do make notes like that, but I still hate coming home with a bunch of half done (or even mostly done) projects! I will say though that the last time I went to a crop and did that, I managed to get the missing links on those layouts right away the next time I scrapped at home. And THEN I finally felt like I got a lot accomplished because I had a pretty good stack of *FINISHED* layouts for a change!
