Tonight I'm making meatloaf, homemade Mac & cheese, and sugar snap peas for my SIL and grandsons. What's on your plate?

Planning on chili and cornbread (I don't get to eat the cornbread, diet restrictions, but I'll make it for everyone else). MIL is visiting and she's one of those people who will eat anything just to be polite, which I hate because I want to make things for my guests that they actually LIKE. You can never tell with her. Though when left to her own devices, she eats only fast food or disgusting snack foods like Bugles and Zebra Cakes, so I don't know that it even matters, lol.

I'm going to butterfly some chicken breasts and stuffed them with bacon and asparagus. I also have some brussel sprouts that need to get used up so I'll roast those in the oven too to go on the side.

I have some frozen meat tortellini, so I will make that with spaghetti sauce for dh and ds, along with some Pillsbury breadsticks. I'll probably have an egg salad sandwich, or maybe I will try out my new Panini maker and have some form of grilled ham and cheese.

I'm not cooking, I'm on strike. OK, maybe that's not quite true. Dh will be home a little later than usual so I'm using that as my excuse to not cook anything decent.
The boys will probably have ravioli and I think I'll make myself some sautéed cabbage with a couple of poached eggs (yeah, I know, bizarre combination, but I LOVE it when the yolk breaks onto the veggies)

I am doing okay and praying that my biologic works to keep me flare-free. I have friends who live 20 minutes away from the hospital and I have been staying there. We are about 90 miles from home and friends are watching the kids. The stressful stuff is, hopefully, passed. He had surgery to remove a disk in his lower back last week, but had numbness that got worse after he got home. So, Monday we came back and he had a second surgery yesterday. He's improving, but I won't take him home unless I know he's good to be released.

pridemom, it has been quite a stressful time for you. I'll send my best thoughts that your dh has a comfortable and easy recovery and that you're able to stay well rested, too. Hoping your hospital cafeteria has decent food, too.

I'm not sure yet. The boy will be at his dad's, so it is just me tonight. I went to the grocery store, so I have some prep work to do and I will probably just throw some of it together for dinner. But what I really want? Chocolate. Like a whole bathtub full of mousse. With whip cream. Chocolate cake, chocolate cupcakes, brownies, whatever. The PMS beast is wanting some kind of appeasement.

I'm making beef and vegetable soup, loosely from ptamom's recipe here.
It's in the crockpot now and it smells really good already. Also I have a boxed mix for cheddar bay biscuits, so we'll have those, too. pridemom, I hope your DH is all better soon, and that you stay well.

Making fish tacos. Never made them before but it has to be pretty easy I would think. Was originally going to bake the fish but thought this would be more fun. My sister is over with her kids so hoping they will try the tacos. If not it is quesadilla's for them!

Dh is going to smoke some pork and serve it with bbq sauce from Phil's bbq which is a popular local chain that also sells their sauce at Costco.

I made 2lbs of homemade chicken patties last night and used them for chicken parmesean tonight we are just going to use them for sandwiches. PattiesI added a little pickle juice (per a copycat chick fil a recipe) and they were so delicious!!

I was going to have steak and baked potatoes but DH says that is too heavy for him yet. So even though he does not care for breakfast for dinner he says he would like poached eggs. So I have some pre-cooked sausage in the freezer that I will add to my plate.
