For a weekend breakfast we have omelets drizzled with salsa and topped with avocado chunks.
Tonight I sliced one up so we could put it on our burgers.
Some avocado tips:
Placing one in the fridge will slow down the ripening process.
If you only use half an avocado, use the half that doesn't have the pit. Keep the pit in the other half in the fridge and it will greatly reduce the browning.
Plop the pit in the middle of your guacamole until you serve it to help reduce browning.

A friend just told me she spreads avocado on toast with some salt, pepper, lemon juice and olive oil. I'm having that for lunch tomorrow

I make avocado and mango salsa in summer - dice up some avocado, mango and Spanish onion. Sometimes I make a dressing using some pureed mango and mayonnaise, but it doesn't really need the dressing. I usually have it with baby spinach leaves as well. It's perfect to serve with BBQ fish or chicken. I love them sliced and drizzled with balsamic reduction. Just had that for breakfast! Oh YES, this!!  My SIL made bruschetta recently with avocado, goats cheese and balsamic reduction. OMG I could have eaten the lot, it was SOOOOO good! There are lots of good ideas on this site.

Toasted bread-of-choice. slices of avocado, paper thin slices of onion. Mmmmmm!

Love it on a toasted bagel sprinkle with fresh ground black pepper and sea salt
Love on toast With cooked (rotisserie) chicken on toasted bread
Love on a burger with pepper jack cheese
So good on a fish or shrimp taco
I use avocados like I would use mayo on sandwiches and salads

stuff them with shrimp salad That's exactly what I'm doing for supper tomorrow night. Making up a batch of Mexican style shrimp cocktail (coctel de camarones) and serving it in avocado "bowls" with some tortilla chips on the side.
