Tonight I'm making a hamburger and rice casserole my mother used to make. My brother is still here and it's comfort food for both of us I've got coleslaw to go with it and will be making cornbread as well. What's cooking at your place?

Roast beef, potatoes, carrots, mushroom and onion gravy. With a side of attitude from my 15yo who hates mushrooms. (She totally doesn't have to eat it.)

I made a couple of large pans of chicken enchiladas (and, for the first time ever I made my own enchilada sauce, which was so much easier than I anticipated). Tonight we have a baseball practice and a game, so we're having enchiladas (nice and quick to re-heat) and arugula salad.

DH is going to hang out with his brother tonight, so just me and the kids. Probably will take them to Chick-fil-a for a treat dinner. But 1) I do not eat CFA, and 2) my stomach has been bothering me today, so dinner for me will be something else. I do plan on cooking taco meat tonight so that tomorrow's taco bar dinner can get kicked off ASAP as my oldest DD has to be at a volunteer gig by 6:30.

The only thing though is that from now on you'll only want homemade

I am always looking for a new way to use rice. (in a fit of being cheap, I bought a big bag of rice and realized when I got home that typically I don't use it a lot beyond hoppin' john. Turns out that this was not a well thought out purchase. )

I have a lot of lasagna left over from last night.

Oh, and for dinner tonight we are having a big pasta salad with every veggie I can find thrown in along with a little chopped chicken and probably some cubed mozzarella cheese. Not very exciting, but a particular favorite of both the boy and I. He is so easy to please.

It's fend for yourself night - DH plays softball and DS has a baseball game (that was changed from an away game at the school I hate driving to more than any other to a home game!). Either ds or I will grab something for us on the way home from the game. DH will get something on his way home.

Leftovers here. My MIL came up on Tuesday to hang out with me and the kids and she loves chicken parm so I made a healthy version of it. And I made plenty. There's also some leftover cabbage from corned beef & cabbage night. I think I'll have that with some ham.

Does anyone have an easy recipe for enchilada sauce? My sister in Ohio says I would like them but she uses sauce that she buys. I have looked for the sauce here(yes even when I go out of town) but have never found any.

We have an event at my youngest daughter's school and they suggested you pack a picnic dinner. So I will be making Chinese chicken wraps and I bought potato salad and macaroni salad. I am also going to bake some chocolate chip cookies later. I hope the weather will be okay for a picnic. Today is a little colder than yesterday and I'm sure it'll be even colder tonight. They will have an area for us to eat indoors, if need be.

I'm making reubens with some vegetarian "corned beef" I made a while ago and froze a second portion of. We'll have carrots and parsnips, and (store bought) perogies, too.

Turns out that this was not a well thought out purchase. ) There's really not a recipe but I brown a pound of hamburger with a chopped onion and salt & pepper. Put it in a casserole dish, add about 5 sliced carrots, a large diced potato, a cup of rice, two cans of cream of whatever soup, 3/4 to 1 soup can of water and about a quarter cup of soy sauce. Bake covered at 375 for about 90 minutes. Not healthy but it's something we grew up on and we all love it I really like that I can make it in the morning and put it in the fridge until it's time to pop it into the oven. Have you tried Yvonne's Mexican rice? It's really yummy and a great way to use up some of that rice. I actually buy rice in 20 pound bags because I use so much of it

Thank you, thank you. It sounds easy enough. I'm still a little off stomachwise but I will give it a try soon. And my sister will be shocked that I use homemade sauce.

I've got steaks and salmon to be grilled providing dh isn't working tonight ... he's a realtor so you just never know but I'm afraid of the BBQ so if he isn't here to do it, grilling will not take place We'll have caesar salad as well ...
