DH just bought more of this tonight when we went on our Costco run. He likes to have a can of it as part of a quick lunch sometimes, and sometimes in the summer I'll use it in cold salads.

I am not a fan of canned chicken, chicken is so easy to cook in the crockpot and shred.
I have been buying the canned salmon. One is farm raised and cheaper. I get the wild caught and I love it. I make tuna salad and salmon cakes with it. It is handy to have at the point where I need groceries. Good protein. I like the tuna also but that is a drier consistency.

I buy the Costco canned chicken. Love it. Cook with it. Saves some time for me. It tastes good. If I didn't like it, I wouldn't buy it. I also use Cream of ... soup, Velveeta, Kraft Mac & Cheese, and pre-cooked bacon.

I cannot do canned chicken! I have used it in chicken salad and it is ok, but I really prefer regular chicken breast, cubed and sauted if necessary. do you really use this in recipes???

lucyg is there more to your toasted chicken/mayo/cheese combination? For some reason it sounds really, really good right now. I just made some this morning because I was thinking about it due to this thread. It's just one large can of chicken (12.5 oz), equal amount of shredded cheese, a little bit of finely chopped onion, and whatever amount of mayo works for you. I just use a dab, but the original recipe called for a LOT. Lightly toast a slice of bread (it helps to have a toaster oven for this), then spread a thick layer of the mixture on top and put it on a cookie sheet in the oven at 350 for about 15 minutes till it's heated through and cheese has melted. I use canned chicken in Buffalo Chicken Dip - it is excellent! No need for the extra steps and expense of buying, cooking and shredding chicken.
