Do the side dishes get eaten up, or do you often have leftovers? I cut back to one or two sides when I realized that I had a fridge full of containers with just a little corn or a few beans or a tiny bit of potatoes. Side dish leftovers don't get used up as well as main dish leftovers around here. So I pared down the number of sides and now just about everything gets consumed. Less prep and cleanup work is also a plus! Our "sides" almost always are consumed during the meal. But we put out small amounts of several things, so that helps achieve that. DH typically makes his lunch right after dinner, so any left-overs he often uses. If we had raw vegetables, he will just toss them into a container as the start of his salad for lunch. When we have tacos, he will bring rice & beans to work the next day, using some of the left-over toppings. We had spaghetti last night. Our green vegetable was the only warm side dish. We also put out a small antipasto (again, typically served before the meal, but we used it as a "side"), some tomato slices drizzled with balsamic vinegar, and a bowl of red grapes. The only left-overs we had was some of the spaghetti.

heh. We're a meat and potatoes kind of family. Most of our meals include a meat of some sort (pork, chicken, hamburger, etc), potatoes and a green vegetable. If not potatoes, then rice or stuffing or fries. The exception to this is pasta, pizza, burgers or *gasp* frozen popcorn chicken. At least once a week, I feel like making as little effort as possible so I put popcorn chicken and fries in the oven and call it good. A few times here and there, there's a roll/bread tossed in there. When it's just me and DH, it's usually just a meat and a vegetable IF it's not a frozen dinner.

Yeah, I love potatoes and would never vilify them but I don't count them as a vegetable when I'm counting up veggie servings, either. That's why we use the term "starches" that someone objected to upthread. It covers grains AND starchy vegetables. I also don't serve corn as a vegetable. I thought it was a grain but learned on a previous nutrition thread that it's technically considered a fruit. Who knew?? Anyway, in this house it's a starch and if we're eating it, then we also have a "real" vegetable or a salad.

Between 2 and 3. Three when it is summer time and there are a lot of yummy fruits and veggies.

I do a lean meat, a starch and a veggie...sometimes 2 veggies if I'm avoiding the starch and want more. I do the same.
