My recipe wouldn't do you any good unless you live around 5,000 to 9,000 feet above sea level! I make buttermilk pancakes and waffles from scratch. In fact, we have waffles for breakfast this mornings. On a posting above, someone said our pancakes in the US are sweet and have sugar and vanilla. I've never seen a "regular" pancake recipe that was sweet. Maybe blueberry or other but not regular. You put the sweet stuff on TOP! I agree the pancake itself isn't usually sweet because the syrup you put on top is. Every once in a while I will add vanilla to my recipe, but I still don't think that makes the pancake sweet.

I don't use mixes at all so nothing in my pancakes have sugar, just the syrup or other toppings do. But then years ago when I was trying to cut out so much sugar, I learned to love pancakes and waffles with just butter and the sweet of it comes from the pineapple orange juice I drink with it! Let me tell you, it was hard to get used to not eating syrup with it. But glad, because for over 10 years, I lived in a place where I couldn't even GET the syrup that I was loved on pancakes so at least I wasn't missing it! But then, it seems like a lot of cornbread recipes have sugar in them and I can't stand sweet cornbread. Odd because I LOVE my sweets but eat too much sugar as it is.

Maybe packet stuff has sugar already added? I don't use mixes at all so nothing in my pancakes have sugar, just the syrup or other toppings do. I beat my eggs very well before adding the milk, beat them again, and then add the flour. I have never had a problem with them being heavy. Maybe altitude or water differences? I beat everything well before adding the dry too ( I thought). It's more than likely "operator error" . I do use 2% milk - I just your post above that you use whole milk. As much as I love the taste of whole milk, I can't justify the calories. So there is a difference there - more likely that than operator error!

I was meaning that maybe that's what the other poster (was it myshelley) was talking about when she said they were sweet. Homemade or bisquick I always add sugar, cinnamon and sometimes nutmeg. But I am also a weird one who doesn't like anything but butter on her pancakes. My mom though? She pulls out her iron skillet, and cooks her pancakes in butter so they have a lovely buttery taste and a bit of a crispy edge. We ended up not having pancakes for breakfast though. The boy didn't want them-but I am planning on making some later on today to freeze in individual portions for later days.

Add me to the list of those who doesn't like syrup on her waffles or pancakes - just butter! Same with oatmeal - a dollop of butter and maybe some half n half, but no sugar. I also prefer non-sugary cereal like plain Special K or Cornflakes with just milk. I can live without sugar, but am a carb addict!
