I'd bring an appetizer or a salad of some sort. There can never be too many of either of those. Or dessert... there's never too much dessert.
Why would you want to eat before you go? That's odd.

Sounds like a party we went to one year hosted by my friend. She never would us what to bring. There were 5 families involved and we ALL brought meatballs, different kinds of meatballs. Except for the host and she made a dessert. It was funny and dubbed the meatball party that she hosted each year thereafter. My daughter loves this! Does she make cake pops to go a long with the theme?

I think the confusion here is with her dh's statement "everyone will just bring what they want to eat". To me, that suggests that everyone is bringing their own meal and everyone will just happen to eat their own individual meals at the same time and place. That is not, however, what a potluck is. A potluck involves everyone bringing something to share. Sometimes everyone brings their own meat and also a dish to pass and sometimes the main dishes are included in the potluck.
After thinking about this some more, can you call your MIL and try to get some more info from her? Have they done this before? Is it a pass a dish thing (potluck) or is it a picnic where everyone brings their own stuff. I think you asking MIL for details would probably get you your answer the quickest

I'd make whatever is your favorite potato salad. It's good and filling and I could eat potato salad 3 times a day.

I am happy to report that I have at least a little clarification on this. Everybody is supposed to bring: their own hot dogs to grill, and a dish to share. The unfortunate thing is that it is now scheduled so late that DH and I will have already eaten, but I guess that means we don't need to bring any hot dogs! At the new time, the only thing I will be wanting is dessert, so I think I will bring that. Plus, if I bring something like cookies or bars, that eliminates the question of, am I supposed to bring plates/utensils for my contribution. Since DH couldn't answer the question "what if we show up with potato salad, and nobody brings forks/ Are we supposed to bring forks?".
