I got some goat cheese & spinach ravioli from Trader Joe's that I'll serve with a cream cheese sauce. And a side of Indian chickpeas (also from TJ's) that just have to be heated up.

A cream cheese sauce? I am curious... I think that I enjoyed my garlic pasta so much the other night I am going to make it again. It was tasty and really easy. The boy is off for the night, so it is just me for dinner.

A nice easy dinner tonight. Sat in my fridge is a pan of Skinnytaste's eggplant parmesan, all thanks to a burst of energy and organization on Monday night. Dh and kids will have it with pasta and I'll have mine with sautéed kale.

My mom bday so family dinner at Olive Garden. Food will be okay but the family part will be dysfunction junction as usual! Just gonna stick a breadstick in my mouth whenever i feel the need to engage.

Well, the steak I took out of the freezer turns out to be pork. So we are having pork steak with baked potato and some veggie to be determined by which can is closest to the front of the cupboard.

We get our first box from Hello Fresh today, but second season softball starts tonight and DH needs to eat right after he gets home from work. He will have the lonely hamburger I found in the freezer and I will do something with the leftover taco stuff from Monday night. Tomorrow, we will start the Hello Fresh box. :-)

We're having mexican chicken pasta salad on a bed of lettuce, tortilla chips and salsa, fresh fruit and cookies for dessert.
It's a repeat of a recent dinner, but they requested it again. Works for me. <shrug>

BLTs with just picked garden tomatoes. I'm trying something a little different and putting mine in pita bread. Sides: corn for DH and fruit salad for me.

It's funny how so many foods look alike once frozen, isn't it? I have several unlabeled zip-lock bags of something with a red sauce in my freezer. I'm in too much of a hurry to take the time to label them when I throw them in there, and I tell myself that I'll remember what it is. No problem! I have no idea what's in the bags. Could be some sort of spaghetti sauce, could be some mexican-y thing, could be just about anything because I make a lot of recipes with tomatoes that end up red and saucy.

I'm having cold peel and eat shrimp with a tossed salad. DH is grilling a steak. I have some fresh peaches for dessert. It's hot outside and I'm in the mood for cold food.

Dh is working tonight but since I bought all the ingredients for Mexican Chopped Salad yesterday I'm making it tonight anyway and he can eat it when he gets home The dd's will probably turn their noses up at the salad so I'm offering corn on the cob and sandwiches to them

Today is my day in the office so I'm going to be lazy and make mexi-sloppy joes. It's a horribly unhealthy recipe that I got off of a can of tomato soup once many moons ago...but the family loves it and I'm just not feeling the need to cook something complicated today. I'll likely pair it with some tater tots and a salad. Yep, a totally lazy mom day for me!
