Well, the steak I took out of the freezer turns out to be pork. So we are having pork steak with baked potato and some veggie to be determined by which can is closest to the front of the cupboard. It's funny how so many foods look alike once frozen, isn't it? I have several unlabeled zip-lock bags of something with a red sauce in my freezer. I'm in too much of a hurry to take the time to label them when I throw them in there, and I tell myself that I'll remember what it is. No problem! I have no idea what's in the bags. Could be some sort of spaghetti sauce, could be some mexican-y thing, could be just about anything because I make a lot of recipes with tomatoes that end up red and saucy. Mystery dinner! Tomorrow night! Make it happen!

I'm not a stew lover, but I do love this recipe. And I love the mashed potatoes on the side instead of potatoes in the stew.

We had broiled lamb chops, instant mashed potatoes (they were sampling them at Costco and DD begged for them), and a salad. I actually got the chops done perfectly this time so I was psyched! I sometimes have a problem getting them done enough the first time. 6 mins each side, I have to write that down somewhere. LOL.

Today is my day in the office so I'm going to be lazy and make mexi-sloppy joes. It's a horribly unhealthy recipe that I got off of a can of tomato soup once many moons ago...but the family loves it and I'm just not feeling the need to cook something complicated today. I'll likely pair it with some tater tots and a salad. Yep, a totally lazy mom day for me! I am curious about this. Would you mind sharing the recipe please?

Dd and I met my dad, brother and his family at a pizza place tonight. Tomorrow night, my dd, dad and I are meeting my aunt and uncle at a different pizza place (their pick) for supper since they are up visiting from Florida. I can't complain. Two nights not cooking, and I love pizza!

The Brazillian Black beans were delicious. It always amazes me that beans and rice can be so good. We had company over and I fed 7 people for under $6.

Brown & drain one pound of ground beef (or turkey), add one can Campbell's tomato soup then fill the can with salsa and add that (I use pace medium picante sauce) simmer until thickened to sloppy Joe consistency. Serve on hamburger buns, top with cheddar or Colby jack cheese. I like this much better than sloppy Joe sauce. I know it's not at all healthy, but it's a cheap, easy meal.

Reporting in late, because this child is wearing me out. (Don't get me wrong. I am sooooo happy and relieved to have him back.) He spent the day eating empty carb after empty carb (cornbread for lunch, because he didn't want any of the spicy Cajun options at the restaurant we went to with my brother, because of course my brother would choose a restaurant that doesn't cater in any way to children rice crackers for a quick snack in the afternoon, then someone gave him a bag of Cheetos and I'm too stupid to say NO you are not eating that!). Anyway. I told him he had to have lots of protein and vegetables for dinner. We discussed it and came up with scrambled eggs with sautéed broccoli and onions, topped with cheese, plus whole wheat toast and milk. Actually, he wanted carrots in his eggs and I wanted zucchini, so we compromised on the broccoli. I was pleased with our negotiations.

anxiousmom - It's super easy & quick. I saute some minced garlic in a little bit of coconut oil, add some cream cheese & milk (I use almond milk), stir till cream cheese melts. Add a little bit of spaghetti sauce & some parmesan cheese. Serve over pasta or gnocchi. YUMMMM!

I've been cleaning out the fridge and pantry. We have a ton of grits, for some reason. So we're having cheese grits and something....ham and biscuits most likely. (this is for 8/6)..we had calzones last night!
