I've seen dried/powdered buttermilk in the store that you just add water to. Does anyone know if this works as well as liquid buttermilk. (I do know about making my own by adding an acid such as vinegar to regular milk.) I specifically want to know if this powdered buttermilk is any good. The brand I saw is made by Saco Foods. Thanks.

Adding things like vinegar to milk does not make buttermilk, it makes sour milk. Buttermilk is a by-product of the butter making process.
Lots of people like me actually drink buttermilk. I would not drink sour milk.

Yes, it does. I like to bake and like to have basic ingredients on hand for when the mood hits. If I buy liquid buttermilk a lot of times I end up having to throw some out. With the powdered you can have it on hand for a long time and I haven't noticed a difference at all in my baking.

I have used the Saco powdered buttermilk in baking. It works fine. I much prefer regular buttermilk. Sour milk also works just fine in baking. Using vinegar or lemon juice to sour it - either one, doesn't matter. It is the acid you need in your baking.
I think fresh buttermilk adds a better flavor in some baked goods, but it just depends on the other flavors that are in the recipe.

I use powdered buttermilk and haven't noticed a difference in quality or taste at all. I like having it on hand for those recipes that call for it. I've also frozen liquid buttermilk, but the powdered is just more convenient.

I have used the powdered buttermilk too with no problem. You just mix the powder with your dry ingredients and use water for the liquid.

It's easy to save leftover buttermilk for future use. Simply fill an ice cube tray with the leftover buttermilk and freeze it. After its frozen I pop the cubes out of the tray and save them in a plastic bag. It will keep several months that way. Then when I have a recipe that calls for buttermilk I thaw what I need.

America's Test kitchen did a report on this. They found that the powdered buttermilk was in fact the only real buttermilk product of all those tested. They said the stuff on the dairy aisle was not true buttermilk at all. Nevertheless, I've used both the powdered and the "real thing" in baking and have found little difference. I keep powdered in my fridge at all times. I only buy liquid when I need it for a dressing or dip.

But other than pancakes and cornbread, what other baking are people doing that calls for buttermilk? I couldn't tell you the last time I bought it.

I don't do much baking with it but there is often times a quart in my fridge because both DH and I drink it.
