Hope you do not mind me starting the thread leannec!
So this morning it was quite nice outside. Overcast and cool. Just wish it would last into the afternoon. So ready for summer and these 90°+ days to be over!
Tonight my KC Chiefs are at home playing against the Seahawks so I am fixing an easy meal that can be ate around the tv:
Sloppy joes using ground turkey Baked beans Fruit salad Bread and butter pickles
Because dd has Celiac she will just have the meat.
So what is everyone else fixing??

No problem I don't have to cook tonight as the dd's are going out with Grandma (and sleeping over) Dh and I will be going to a great steakhouse for dinner with friends ... I'm not sure what I'll eat but I know there will be wine

It's actually summer here now! (It's been cold and rainy since May, but for the past two weeks it has been wonderful!) Sooo, I made salmon (with a hint of lemon) and couscous.

All kids left for college early this morning and are currently in New York. Got them a room for the night to break up the 15 hour drive and so that dd#5 could stop and see her fiancé. Tonight dh and I have a date night. We are going to a nice restaurant in town. There is no cooking in my immediate future

Last night I made spaghetti pie, a recipe I saw on the Today Show. Matt Lauer said it's the best thing he's eaten on the show in a couple of months.
I made it exactly as the recipe states. It was okay, not earth shattering. I like the concept of the dish but it definitely needs some tweaking! I may make it again in the future but on my own terms.
Tonight??? I don't really know yet but it definitely will have meat. I am hankering for a steak and baked potato.

Why does the burden always fall on us?
I have had my family sitting around the house waiting for me to get home to make them dinner. That infuriates me!
Starting on Monday I am on call for Grand Jury in a town an hour from here for the next 60 days. If they think for one minute I will be making dinner on the days I have to report they have another thing coming!

My box arrived today from Freshly so I have a bunch of choices. With just me it's hard to cook and not have a lot of leftovers so I thought I'd try them out for a week Everything looks pretty good so I'm excited to eat dinner tonight. I think I'm going to start with the Meatballs and Zuchini pasta

It's pizza night! Just haven't decided if I'm going to make it myself or if I'm going to order out.... Friday night is pizza night here, too. I went with semi-homemade. I bought the refrigerated dough in the bakery at Publix, but I'm making the the sauce. DS14 is having a friend stay over, so I'm making an extra one. Then we'll have ice cream with various toppings for dessert. And no doubt there's popcorn on the menu sometime this evening, too.

DH made short ribs for him, along with Maw-Maw Fried Potatoes (cut up potatoes with little greasy in a skillet) I had the BLT wraps that another Pea mentioned on What's for Dinner several days ago. I wish I knew her Pea name to thank her - it was delicious!!! Thank you BLT Wrap pea! ! ! !

I think it was me. Was it this BLT Wrap recipe? My DD would eat those wraps every day. I keep the filling in the fridge and wrap them up as she wants them so the tortillas don't get soggy.

I'm exhausted and not really sure what the heck is wrong with me. So the meatloaf, mashed potatoes and green beans I had planned tonight will have to wait until I have my energy back. So the guys are in charge of dinner tonight. I'm very happy to relieve the dinner decision making reigns to them.

We had carnitas with corn tortillas last night and I still have a lot of pork left over, so we are having carnitas burritos (with flour tortillas) tonight. I will add some beans, cheese and onion. Maybe some lettuce and tomato. Keeping it simple tonight.

I've cooked a ton for the last week and a half with my son here on leave from the Navy. But he left yesterday. Tonight, my husband and I are going to our favorite Indian restaurant. We're taking the daughter of a friend. She's a senior in high school. Her parents are out-of-town this weekend and while she's old enough to stay alone, we are the designated emergency contacts to check on her. We love her dearly so we're all going out to eat together.
