We eat curry a lot! Chicken, lamb, shrimp, chickpeas ets. If you have never done anything before one of the easiest dishes to try with curry is fried potatoes. You can make regular chicken or pork and then just make fried potatoes. I do it exactly the way, I do when I fry them without curry. Oil, sauteed onion and potatoes then I add curry spice to taste. I do use whole cumin and mustard seed in my oil, but you don;t have to do that. Great way to introduce the spice to your family with out getting overwhelmed.

I make Curried Chicken. I basically cut up chicken breasts, cook them in a little olive oil, add a can of cream of chicken soup and then add about a tablespoon of curry. I also add a little sour cream. Then, I serve it over rice. I am not a fan of curry but my dh and ds love it so sometimes I will make it for them and eat something else.

Thankfully we have lemongrass growing like weeds and a kafir lime tree that is as tall as the house so we always have that stuff on hand. Oh you are so lucky!!

I use curry quite a bit and I'm sure you will find a lot of recipes online for chicken curry or vegetable curry. I found a recipe from the Pioneer Woman called Curried Chicken Pasta Salad which was a big hit this summer. Everyone who ate it asked for the recipe.
Two summers ago I made chicken curry about once a week. I would have eaten it everyday! I'm not sure why I was so addicted to it!

We eat a LOT of curry dishes, mainly Thai and a fair bit of Indian too. I have no idea what "Penzey's Curry" is though - is it Indian or Thai/Asian? Is it a paste or a sauce? This is what I would do also. If it is a paste you should cook it out a bit first, then add the coconut milk and put everything else in to simmer. You can also use beans, broccoli, pumpkin, potatoes, capsicum - any vegetable that you like goes well in a curry. I've never used powdered curry. I use paste and heat it in a bit of oil before I add coconut milk and my other ingredients. My personal favorite is Panang red curry. Yum! I prefer paste as well.

Meg the recipe sounds like what my hubby makes. Thankfully we have lemongrass growing like weeds and a kafir lime tree that is as tall as the house so we always have that stuff on hand. We never use curry powder, just doesn't have the same flavour and is too raw for me even when cooked off. Thai pastes all the way for me Lucky you to have those exotic ingredients fresh at hand!!! I love 'em but have to go out of my way to try to get them.

I love a shake of curry powder in my tuna salad, and I add chopped apples and celery. Yum!

I love curry. One of my childrens favorite dishes is a sort of bechamel sauce with curry. I put either chicken or fish in the sauce and serve with rice. They love it!

LOL, lemongrass can get put of control however my dh has a vegie patch where it is contained. We are also really lucky to have an Asian grocery store a few minutes away where he is a regular. The owners love him as he is a regular and are always giving him something to try.

There are only a few things I make with curry powder.
I mix about a half cup of plain yogurt, a couple tablespoons of yellow or grainy mustard, and a teaspoon of curry powder together, then marinade chicken strips or pieces in it all day, then grill them on skewers. I serve the chicken with a sauce made of yogurt, lemon juice, crushed garlic, and a little salt.
I use curry powder in a peanut-pumpkin curry soup that uses canned pumpkin, peanut butter, curry, ginger, and a few other things.
Then every once in a while I will toss cauliflower florets with some oil, a little salt, and curry powder and roast them.
I usually splurge on the Penzey's Maharaja curry because I love the flavor so much and don't use enough for it to be a big expense, but I'll try the new one on the cover of the latest catalog.

I like curried chicken salad, too. I add raisins and cashews to it. Yummy. A few weeks ago, I tried a recipe for Captain's Chicken. It's a dish from the South (Georgia or the Carolinas?) that has a bit of curry in it. It was total comfort food. I don't remember which online recipe I used -- there's a million versions.
I like the Penzey's Maharaja, too. It has a really good flavor to it. I don't like really spicy foods.
