My kids wanted to make homemade fudge, so we did, despite the fact that it was a zillion degrees and humid! I have to wonder if the humidity affected it because the consistency seems a little off (a bit melt-y at the bottom, despite the fact that it chilled in the refrigerator for 6+ hours). It still tasted good though!

I'm currently waiting for the s'mores cupcakes I have in the oven to be done. My daughter's doing ballet intensives and we kinda got into a groove of Thursday being "cupcake Thursday". Now all the girls kind of expect a cupcake (or two!) on Thursdays. So far I've made chocolate, vanilla, lemon, key lime, orange. I'm pretty happy this is her last week! LOL! Oooh. S'mores cupcakes sound awesome. And I love the idea of Cupcake Thursday. Cupcakes are my favorite.

We're supposed to have a cool down tomorrow, so that's when I'll do some baking. I'm trying out Annie's zucchini bread recipe and I'm making fresh picked blackberry cobbler. Yummy.

Not today, but I made these last week and you NEED this recipe. Hands down, by far, the best chocolate chip cookie recipe. The dough freezes really well too. Soft Chocolate Chip CookiesYou're right.. I do NEED that recipe. Thanks!!

My 13 year old son made the cake and frosting with my assistance. I don't even really like snickerdoodles and I thought this was fabulous. The recipe comes from the Cake Mix Doctor cookbook
Snickerdoodle Cake 1 plain white cake mix 1 c. whole milk (I used 1%) 8 T. (one stick) butter, melted 3 large eggs 1 t. vanilla extract 2 t. ground cinnamon
Prepare as you would any cake mix.
Cinnamon Buttercream 8 T. (one stick) butter, softened 3 3/4 c. powdered sugar 3-4 T. milk 1 t. vanilla extract 1 t. ground cinnamon

Not today, I got off work at 8 pm. But yesterday, I got off at 4:30 pm AND it rained for a few hours and was cool. I came home and put my roll/bun yeast ingredients in the bread maker on the dough and rise selection. I made a bunch of rolls and buns with the dough and cooked in the oven. DH said whatever I did different this time, remember it for next time. That they are always fantastic but last night was the best ever. I think all I did was cook at a slightly lower temperature. I did that because I lowered the temperature that I cook my buttermilk biscuit recipe and it was so much better. Both were lighter and fluffier for some reason! But then, I live in high altitude and baking CAN be a challenge sometimes!

I don't even turn the oven on in the summer... Same here. It's already 100 degrees and very humid. I've been craving homemade chocolate chip or oatmeal cookies, but I'm not making them until Fall.
