I don't have zucchini, just summer squash, but basically the same, just a different color, right? I've been grilling mine every week, sometimes over the BBQ in a basket, sometimes inside on a grill pan. I just slice the squash in about 1/4-1/2 inch thick slices, brush with olive oil, and sprinkle a bit of salt and pepper. I grill several at a time (this takes a while). It will be that night's veggie and the rest go in the fridge for later. I'll eat it both hot or cold. Simple and yummy.

We love them roasted. I just cut them into 3/4" (approximately) cubes and put them in a baggie. Add a little olive oil and some Penzey's Fox Point seasoning and shake it up, then put them on a jelly roll pan and roast them.

ZUCCHINI BOATS
2 med. zucchini 1/2 lb. sage sausage (Jimmy Dean, turkey, etc.) 1/2 onion, chopped 1 tomato, chopped 1/2 c. mushrooms, chopped 1 c. chicken bouillon 1 tsp. basil, thyme, salt, pepper 1 c. stale bread cubes (diet bread is great) Grated Parmesan cheese Steam zucchini 15 to 20 minutes or until tender; slice lengthwise, scoop out seeds and discard. Scoop out pulp and save. Set aside. Fry sausage with onion, tomato, mushrooms and pulp. Drain off grease. Add chicken bouillon, basil, thyme, salt and pepper. Stir in bread cubes. Should be the consistency of regular stuffing when mixed. Stuff boats. Bake at 350 degrees for 20 minutes. Sprinkle with Parmesan cheese and bake 5 minutes more. Serves 4. In this recipe, are you steaming the zucchinis whole? Does it really work?

My friend likes grilled zucchini pizza. She slices it lengthwise, drizzles olive oil, pizza sauce, peppers, and goat cheese on top and grills it until done.

Never heard of this before!! The US and UK food differences are many Eggplant/aubergine is another, more common, one which you probably know. There's lots but my mind has gone blank on others for the minute

I do similar, minus the sunflower seeds, and plus masses of garlic, although I might give the seeds a whirl now that I have read about them here. They will add a bit of texture. gar is right, they are courgettes!

I learned a while back that you can find more recipes using both names (not on the same search). I also had trouble with my zucchini plants and found advice using both names (again, not on the same search).

My favorite marinade for zucchini is basil olive oil, lemon olive oil, white balsamic and black truffle sea salt. Marinate all day long and grill. Or I like to use a very robust EVOO, Ancho Pepper vinegar and applewood smoked sea salt as a marinade and grill.

The recipe I use doesn't steam the zucchini first, but it bakes at 350 degrees except 30 to 35 minutes instead of 20.

I like zucchini noodles with marinara and parmesan. You can also throw it into a quiche.
