I spent the day at the ND State Fair with my other grandson today. Four teddy bears later, I am pooped! Tonight I'm taking a Thai cooking class so whatever we make there is dinner What's on your plate tonight?

Cheese enchiladas, Mexican rice and beans. Yum! I've been eating so much garden produce for weeks, I'm looking forward to this meal.

It's still rainy and cool here, so I have a big pot of spaghetti on the stove. I made enough for 3-4 dinners, yea!

I love reading this thread to get menu ideas-thanks for posting it. DH is grilling chicken and for sides we're having macaroni and cheese, scalloped potatoes (kids don't like this), and salad.

Honey Soy Chicken - I am making them as tenderloins and grilling them on the George Foreman instead of making kabobs. New marinade for me, but based on the reviews I'm sure it will be great. Haven't thought a lot about sides. Have 7 pounds of potatoes in the pantry I should probably start using if I want to get through them before they go bad. DH is backed up on leftovers, have a TON. Might make Sunday a leftover night instead of dinner to work on them a bit.

Grilled shrimp skewers on top of an arugula and tomato salad. And garlic bread on the side. Hoping to just heat it up in some foil on the grill so I don't have to heat up the kitchen! Still pretty hot here and we don't have AC!

Trying a new recipe. It look yummy. Hopefully it turns out yummy! Honey Butter Pork Tenderloin
Edit. Made the above recipe and the sauce burned in the oven. Some reviews complained about that on the recipe site. The tenderloin still tasted great without the sauce. I will make again, but transfer to a baking dish after browning and reduce the sauce without putting it in the oven.

Someone posted a recipe for Parmesan zucchini spears. I am going to try that with a side salad and some marinara sauce. I have zucchini coming out my ears and I don't even have a garden!

I just had a colonoscopy this morning so I am beyond hungry. I put in a pinterest recipe for pork chops in my crock pot. I plan on having them over rice with broccoli and cut up watermelon. Yum

It's very tasty on chicken, pork chops to pork roast. Mmmmm!

Fried rice made with leftover rice. I added chicken, green beans, carrots, scallions, corn, and garlic. It smells good. I hope DH gets home soon or he'll be eating leftovers alone.

Somehow over the years, my ex and I came to an unspoken agreement about who takes the kids where. He is the go-to guy for fairs of all sorts. As for dinner, I ate leftovers from last night's Roadhouse dinner. It was every bit as good tonight as it was last night. I should probably call them and let them know they are doing something right.

DH spent 13 hours smoking a brisket on Tuesday...and we had somewhere around 8 lbs of brisket when it was done. We still have a bunch left over so I made breakfast burritos with potatoes, scrambled eggs, brisket, onions, peppers and cheese. I also made a couple of bacon ones because the kids like bacon and I didn't want it to go to waste. They were delicious!! Next time though, I'm going to add some hot sauce!! YUM!

I have salmon in the oven. I'm going to serve it with green beans and a red quinoa-bulgur mix that is doing its thing in the rice cooker.

It's 105 here and just me and my 3 yo. I wish someone was cooking for us..kale spinach salad for me, fruit and grilled chicken strips or cod for him. And plenty of ice cream later!
