So, did I hear her correctly when she said that the more cream, the slower the melting? I made chocolate ganche the other day and froze the left overs. I took it out of the freezer a little while ago and it *is* thawing slower than ice cream would, but ganache stays fairly thick to begin with. I am planning on making a "mousse" with it by mixing whip cream (homemade.) I have done this many times over and have found that the more cream (heavy cream) that I use, the faster the ganache/whipping cream loosens as it sits unrefrigerated. Seems like my experience is the exact opposite of what she said?? That was what happened in the TV station's experiment too - the Haagen Daz ice cream had the most cream and it melted the fastest. Yuck!

If it contains something you wouldn't have found in your Grandmothers pantry, don't eat it - Jamie Oliver Although, I'm pretty sure I wouldn't have found mangos or avocados in my Grannys nordic pantry, so I have modified this rule a little bit My grandmother tended to have margarine, cool whip and cheap processed meats like bologna in her house. I don't think Jamie's grandma was a Depression and post-war housewife trying to raise 11 kids on her alcoholic husband's sporadic earnings.

My Grandmother was also a widdowed ( by alcoholic husband), post war housewife, but you would find butter in her fridge. I don't think there were much processed crap to buy in Norway before more modern times. If you couldn't by meat you got herring, or fished it youselves. Berries and fruit were preserved and eaten in the colder seasons. Same with potatoes. I could very much go by my Grandmothers pantry, and it would exclude most of the additives we see today. I would not take up her smoking habit though

Yuck.
This is why I try to avoid processed foods. Its not always possible because I do cave into a craving or don't always have the time to cook. Even then I still try to look for the least amount/more natural ingredients. Majority of what I eat though is actual food. Its scary what is in "food" nowadays.

Such an excellent reminder of why I need to clean up my diet (again) and stick to fresh ingredients and cook from scratch (again). I've let myself get lazy and have found myself buying more and more pre-made stuff. That's really scary. Ice cream that doesn't melt??
