We have some BBQ meatballs left over from yesterday, so I think I'm going to heat those up and serve them over rice (probably adding a little more BBQ sauce to the meatballs). We will also have a vegetable of some kind and a green salad.

Monday night is my biggest challenge because I go straight from school to my tutoring job and must fight the temptation to stop for fast food. I'll be eating some apples and a whole wheat tortilla wrap.

I am making grilled flank steak and some kind of potatoes. Does anyone know the name of the potatoes that you slice really thin but not all the way through the potato? I think you bake them and top with cheese or maybe you rub something on them before you bake them. Those are Hasselback potatoes ... there are a bunch of great recipes on Pinterest ... I've heard that a trick to keep from cutting all the way through the potato is to place a wooden spoon on each side and then slice

I've been informed by the dd's that they are sick and tired of chicken Well, boneless skinless chicken breasts are the best thing for me to serve to dh as he is trying to lose weight ... Yup, cooking in my house is such a joy Tonight, we are having grilled burgers (no chicken!) and Baked Garlic Parmesan Potato Wedges ... I would say that I'm including some other veggies but I would be lying Oh, off topic but I'm just going to let you know that I posted a Survivor RefuPea Pool thread today and would love any of you to get invloved! It is a lot of fun

Tonight is Veggie Quiche. I use a Pillsbury pie crust, prep that in the oven for 8 minutes. While that preps I saute 1/2 yellow onion, mushrooms, and cubed butternut squash. Beat 8-10 eggs, 1/2 cup of half n half, salt , and pepper to taste. Fold in the sauteed veggies plus 2 cups of fresh spinach and 1 6oz package herbed feta cheese crumbles. Poor into pie crust. Bake time is usually around 30 minutes, my oven is tempermental.

Tonight is Almost 5 Ingredient Spaghetti Pie. It is made with spaghetti squash and sooooooo good! I love it because its fast and I can prep everything ahead of time. I am cooking my spaghetti squash now (in the microwave - so simple) and sausage. I will make my sauce next and then put it all together in a casserole dish to bake. My husband and I eat a paleo diet and since I am having the leftovers now, I must share last night's meal. It was crazy-good! Sweet & Spicy Chicken Fingers & Eggroll-in-a-Bowl!

All your meals sound wonderful! I went to our new Kroger Marketplace (Grocery on Steriods) and bought some wonderful bread and makings for subs. Quick and easy and DH loves them! Thinking of making some Tomato Basil Soup to go along but I know he will want (have to have) French Fries!

Book group tonight, so I will have the taco-seasoned chicken I cooked in the crock pot yesterday either as tacos or nachos. We had smoked ribs yesterday, too, and I didn't get to the chicken. I've got leftovers galore!

We had pasta with char grilled vegetables, bocconcini, prosciutto and basil. The sauce is sun dried tomato pesto and mascarpone. We all love it, even fussy britches DS had 3 helpings (although I must admit he picked out the vegies!)

I made vegan pizza tonight with onions, mushrooms, tomatoes and greens on top. Yum! (Cooked it a little too long, crust was hard.)

I just finished of a helping of Stove Top Stuffing. In my case though it's Inside Microwave Stuffing. I love the stuff and every once in a while I indulge in a box.

I'm a loser. At 8:00 pm when I still hadn't started my chicken soup yet, I gave up and made a Cup o' Noodles (chicken flavor!) instead. I added some little bits of cooked chicken so it would somewhat resemble dinner. It was actually kind of good. I refuse to read the nutrition information. LOL
