I have never been a chili fan (I don't care for the beans), but my husband told me how much he liked Panera Bread's turkey chili. I searched for the recipe and made it. It is a winner! It calls for grilled turkey breast and ground turkey. The grilled turkey breast gives it a wonderful flavor! I use white cannellini beans instead of the kidney beans and sometimes I omit the garbanzo beans. I do not like onions at all, but use them in this recipe. They cook down enough that I don't notice a strong onion flavor. Use all quality ingredients. We do lean ground beef and fresh onion, peppers, and beans. Kidney, pinto and white kidney. My DH does up a spice blend with smoked paprika, ancho chilli powder, cayenne, and cumin, a touch of oregano and fresh garlic. He likes it extra spicy though. We simmer all day in a crock or counter roaster. We make a huge batch (10 pounds usually) and then freeze in individual containers for lunches or quick dinners. He entered a chili cook off and came in first so it's pretty good.

My husband makes fantastic chili, but we add black beans. Many people don't add any beans to their chili.
We top it with fritos, cheese and sour cream

Op, what are you using for your liquid base? I find that if I use canned tomatoes in a soup, stew, or chili, I get a tinny, chemically taste at the end that I don't like. Just suggesting that it could be that instead of your spices. Hmm, hadn't thought of that one.

This chili is my absolute favorite. It's from a site called Peace Love and Low Carb. I usually add 1 can of drained kidney beans (and it's still low carb).
KICKIN’ CHILI INGREDIENTS
2 1/2 lbs. Lean Ground Beef 1 Medium Red Onion – Chopped – Divided 4 Tbs. Minced Garlic 3 Large Ribs of Celery – Diced ¼ Cup Jalapeno Slices 1 – 6 oz. Can Tomato Paste 1 – 14.5 oz. Can Tomatoes and green chilies 1 – 14.5 oz. Can Stewed Tomatoes 2 Tbs. Worcestershire Sauce 4 Tbs. Chili Powder 2 1/2 Tbs. Cumin – Mounded 2 tsp. Salt 1/2 tsp. Cayenne 1 tsp. Garlic Powder 1 tsp. Onion Powder 1 tsp. Oregano 1 tsp. Black Pepper DIRECTIONS Heat slow cooker on low setting. In a large skillet over medium-high heat, add ground beef, half of the onions, 2 Tbs. minced garlic, and salt and pepper. Once the beef is browned, drain excess grease from pan. Transfer ground beef mixture to slow cooker. Add remaining onions, garlic, celery, jalapenos, tomato paste, tomatoes and chilies (with liquid), stewed tomatoes (with liquid), Worcestershire sauce, chili powder, cumin, salt, cayenne, garlic powder, onion powder, oregano, and black pepper. Stir until all ingredients are well combined. Cook on low 6-8 hours. Makes 16 Servings: 1 Serving: 1 Cup Calories: 137 Carbs: 4.7 net grams Fat: 5 g Protein: 16 g
