Last night I ended up making tacos. Now I'm back to square one and have no idea what to make tonight. I'm thinking about Tuscan bean soup, but I'm not committing to it until I gauge my energy level.

We hope to be enjoying our first Tball game of the season tonight at 6:30 - that is if the fields are dry enough to play on after the bit of rain we got.
We plan on having dinner before the game and a snack afterwards. I think I will make steak fajita quesadillas and fresh fruit. Sounds good to me!

Fried Rice Friday here!! Almost every Friday I make a vat of chicken fried rice filled with lots of veggies and eggs :-) It's really good. Secret ingredients: butter and thai garlic chili paste.

I'm hosting Book Club here tonight so it will be 12 ladies munching on appetizers and dessert and drinking wine The usual deal is that dh and dd's have to scrounge from whatever Book Club food is available since I refuse to cook Now I just need to get my ass in gear and start cleaning this house

We did end up with cousins last night, so I am going for 3 nights of not cooking (Saturday is a birthday and a theater club performance so no cooking!).

The kids' dad didn't come over last night due to circumstances somewhat beyond his control. I had kids running three directions last night - and I only have two of them! I made them burgers with pepperjack cheese. We at late - I cooked them close to 9 and one of them didn't come home til just after 10. Even so, everyone was happy. There were four burgers, and I only at half, so that tells you something right there. I have no idea for tonight. Hopefully, the kids' dad will bring last night's dinner over tonight. Lisa

I still have the pound (actually a lb and a third) of ground beef I took out yesterday. So, something with that. Chili rice? Cheeseburger macaroni? Spaghetti and meat sauce? I dunno.
Actually, I think cheeseburger macaroni is sounding like a winner.

I'm tired of giant cabbage (impulse buy ) taking up so much space in the refrigerator so we're having Deconstructed Stuffed Cabbage Casserole , roasted asparagus, carrots, and corn, applesauce if I feel like rummaging around in the freezer for it (which is highly unlikely), Italian bread, and peanut butter oatmeal and molasses crinkle cookies for dessert. newlywoods03, good luck to your son and his team!

Last night, after much thought, I decided to make grilled tuna salad. I found the tuna steaks in the freezer, and they were a quick thaw, and I even had time to marinate them before cooking.
We're going to a musical performance at the high school tonight, so I'm not wanting a heavy meal. I think we'll have Trader Joe pasta pockets tonight.

Pouring down with rain again here and chilly so we will soon be having chicken fajitas, spiced rice, sour cream, cheese and avocado with lime as I have some needing using, followed by tropical fruit salad and ice cream.

We're having chicken and noodles tonight, crockpot style. It's simmering as I type. Maybe a small green salad on the side. We don't always have desserts but since my doctor wants me to watch my fat and sugar intake, I guess we'll be having even less. He also told me to use margarine instead of butter... and my reply? "Well, that's not happening!" He laughed. Not have butter? The man's lost his mind!

Last night ended up being a mish-mash of foods with pretty much all of us having something different. Dh is having sinus surgery today, oldest ds is umping a baseball game tonight which won't finish until 7:00; therefore, I'm taking the easy way out, on our way home from the field I'll stop and pick up burritos from a local place.

I'm making hashbrown casserole aka funeral potatoes, but I'm going to add chunks of ham to make it a meal. It's cold today and I'm once again feeling under the weather (damn fibro and 80 other things wrong with me) so that will probably be it. Maybe I'll throw some other veggies in the casserole and call it good. I found a recipe in BH&G for old fashioned lemon bundt cake. I might get to that this weekend so I can report and share if it was good. Don't hold your breath though...

Good Friday meals again, ladies. We are having tuna melts on our leftover sourdough bread - I got really thin slices of cheese at the market. We'll also have asparagus - we are going to turn into stalks of it if we don't stop eating it, but it's our favorite vegetable and only in the market for a little while. I'd love a piece of lemon Bundt cake, SunnySmile. I love lemon anything. But mostly cake.

Well, we had to go to our CPA and sign our taxes today so one the way home, we stopped at Michael's for me to pick up some of their 3/$10.00 t-shirts and a pad of 12 x 12 paper for $5 buck. After that we started discussing late lunch / early supper so we went to New Orleans Hamburger & Seafood restaurant. I had their thin fried catfish, Mardi Gras salad, hushpuppies and garlic fries. DH had their thick fried catfish and the same sides plus he ordered their Fried Green Tomatoes. He is still talking about how good the Fried Green Tomatoes were. Had their little ice cream cone for dessert.
