Good Monday morning! Tonight we're doing easy since the girls have soccer practice! Grilled italian and garlic & cheese sausages, oven roasted mini potatoes and oven roasted broccoli.

I am trying to think of something easy. I would like to be able to sit outside for a bit tonight and not have to spend time indoors cooking!
I have to hit the store for potatoes and carrots for a pot roast I bought yesterday for tomorrow's dinner. So I will try and find something easy. I really would like some BBQ chicken. Maybe fried potatoes with it.

Easiest night-leftovers! We have a squash chicken dish we made Saturday, roast beef for sandwiches, baked potatoes, "unpickles" , and I am sure I am forgetting something. Weather is gorgeous and I was planning on sanding down chairs I bought at the flea market to get them ready to reprint and cover, but my best friend called and asked if I wanted to have lunch at our local beach and sit and read. The chairs can wait-I need to sit in the sun today!

Quiche but changing up my usual ingredients. Tonight I'm trying it with caramelized onions, ham, cheddar, brocolli, and mushrooms. Fruit salad of strawberries, raspberries, kiwi, and pineapple with light poppyseed dressing on the side.

Pork loin steak with leftover veg and gravy from yesterday. Hubby hates left overs and has asked if we can not have them for a while - he's agreed to be in charge if Monday's evening meal for a few weeks - we'll see how that goes

Well, I won last night and we had steak and home fries and tossed salad ... the only problem with that was that my realtor dh got called out to see a client right at the time the steaks needed to go on the grill ... the grill that I am deathly afraid of Grandma was here for dinner so it needed to be cooked so I put on my big girl panties and grilled those steaks I over cooked them a tiny bit but I think I did OK for a terrified rookie Tonight we're having the pulled pork that dh wanted last night ... served with some salad to be determined

I'm headed to Costco with my mom later on today (who apparently is incapable of going by herself, sigh) so that means Costco chicken or some other convenience-type dinner. yay!! ETA I am feeling pathetic. I got dumped by my own mom! She canceled on Costco because she is just too busy this week. So I probably won't go either, since I also have a busy day. So ... dinner? who knows.

Yesterday was GORGEOUS here!! Sun was shining, no wind and it hit 80 something! Doesn't happen often so we all bask in it Literally, we got the pool and slip n slide out. Perfect! Today is supposed to be nice as well!! Our big family dinner is tonight... My mother in love is making taco lasagna. We're bringing tortilla chips, sour cream and ice cream

Last time we had spaghetti - pasta and jarred sauce my kids complained that I hadn't made "real" spaghetti sauce in a long time. They were right I had gotten lazy so on Saturday I made a huge pot of sauce and tonight we are having spaghetti with "real" sauce and garlic bread.

I'm not sure what's for dinner. I set out some ground beef to thaw in the fridge last night, so it will probably be ready when I get home. It might be Hamburger Helper (stroganoff) and lightly steamed sugar snap peas. I'm really not sure. I don't want to get a pile of dishes dirty because no one wants to wash them!

Except that I *am* starting with pre-made sauce. I use the Hunts in a can because it basically is pureed tomatoes with a few spices that I can doctor up with impunity.

We are having leftovers of the fried rice I made on Saturday -- DS's with chicken, mine without. I'm going to steam broccoli to go along with it.

Homemade chocolate chip cookies. I made cashew chicken with rice and cookies for a family in need. The cookie recipe makes 5 dozen so I pandered those cookies to neighbors and family just to get them out of the house. I still have some left over. Oh, you were talking about "real" food for dinner. No clue.

It's something we made up here since I love cucumbers but hate pickles. And it is probably something that is a real thing and I just don't know what it is really called, lol. it is just cucumbers, red onion sliced really thin, rice wine vinegar, kosher salt, and lots of dill. It has a pickley taste without being pickles.

I tutor tonight, so Mondays are almost always leftovers night. DH will finish up some spaghetti and I'll have some fruit and a turkey/cheese wrap on a whole wheat tortilla. I must make dinner tomorrow.
