I just took them out of the oven, and they have feet! LOL
I think they are too thin, though. They spread a lot when I piped them onto the baking tray. I also put too much food coloring in them.
A few weird things... First of all, I bought the Red Mill almond flour, but it has brown flecks in it, so my cookies have those flecks. I ran it through the food processor, so I'm not sure why that happened. Is there more than one kind of almond flour? In all the videos I watched, it was white right out of the bag, and mine is more tannish with those brown flecks.
Also, the recipe I used said 120 grams of egg whites, or about 3 large eggs. It took me 5 large egg whites, so I am wondering if that is why mine spread more?
Anyway...I haven't decided on a filling yet, and I have no idea how they taste, but I guess I got the mixing technique right since they have feet. I will definitely try again!
I'll post photos later after I fill them.

Yeah, I was way underwhelmed by the macarons I bought at Ladurée. But as I stated in another thread, I don't really have a sweet tooth so I'm probably not the best judge. I do have a sweet tooth and I was excited to try one for the first time at an event we went to last weekend. They looked pretty, but the taste was just --meh--. I too was underwhelmed! It really depends on the filling, I think a lot of people make the mistake of filling them with butter cream which is pretty but not very tasty. You need to try one with ganache, and probably with a fun flavor, not just chocolate, which I like, but if you want to be wowed, probably a fruit and chocolate :-) if that doesn't do it for you, then these are not the cookie for you.

I'll post photos later after I fill them. They do spread, what kind of coloring did you use? Too much liquid can make them spread as well as too much folding. If you had feet them I'd consider it a success. You need to buy blanched almonds or blanched almond flour, if you get the Bob's red mill I thought that only came that way, but the trader Joe's has skins on. It doesn't change the taste but it gives it a speckled look.

I'd try them again if you can find a place with fun flavors that are not just a butter cream. Butter cream can be pretty and holds up well but in my opinion it doesn't taste good in a macaron.

did you use food coloring liquid or gel? the gel is better. it won't water down your batter but the color will be as intense.
if they spread too much, check that you whipped your eggs to a peak or that they weren't too runny.
the Bob's Red Mill flour is usually really light color with no flecks from the skin. that you get a lot from the Trader Joes flour but not really from Red Mill. that's strange.

Over spring break I tried to make some. I tried 5 times and only one batch got a foot. It was a rainy day so I think that May have been the problem. That's my story and I am sticking to it. I need some for a shower so I bought some instead. That ABSOLUTELY was the problem. In the South, Divinity is really popular. You can't make Divinity and other candies on humid days. They just don't set right.
