Does anyone make brioche by hand? Or do you make brioche donuts? Do you have a tried-and-true recipe that works by kneading by hand?
I've made other types of pastry, and hand knead regular breads. I watched several videos and am familiar with the process, but my brioche dough just didn't turn out today.
There are so many variations on this recipe, and I was unable to find one that called for active dry yeast (rather than fresh), that was for donuts, and kneaded by hand.
