It's not that I hate vegetables, I'm just don't really like them. lol. I'm not at all a picky eater and I'll eat anything that's served to me when I'm out. But now that my kids are away I really struggle with what vegetables to cook. (because I always cooked some vegetable when they were younger so I could set a good example. lol) I don't mind them in stews, soups, chili, etc. But when I have your basic meal of "meat, starch, vegetable" I'm mostly at a loss. Sometimes dh and I don't even bother -- we'll just have meat, starch, and then a basic salad. But of course that's kind of boring after awhile.
I'd probably be inclined to put sauces on things but I've always felt like I should eat vegetables when they're not covered in sauce or cheese or whatever.
I know people will say to roast them and I have tried that. But maybe I'm roasting for too long? It always seems like they're too shriveled. Or maybe I need more oil on them? Or maybe something else?
Any ideas? Good recipes? With summer coming up I feel like I should be taking advantage of more fresh produce in the stores, and our local farmers' market.

Roasted asparagus is one of my very favorites. I roast it in a hot oven (400+) until it looks a little caramelized. How about adding the vegetables to your carb? Add spinach (or another green) to rice or pasta, or try some quinoa with chopped tomato, pepper, onions, corn. I also like to add more vegetables to spaghetti sauce--shredded carrots, chopped zucchini. I like green beans that are steamed, then I add a little bit of butter or olive oil and garlic salt. Do you like raw vegetables? When I can't think of anything else, I put out a plate with some mix of cherry tomatoes, sliced pepper, carrots, kohlrabi, broccoli. I like cauliflower -- it's really good roasted. Just cook until the edges get browned. A serving of most cooked vegetables is just 1/2 cup.

Maybe the issue is "what vegetables to COOK". Try them raw: salad season is coming up and your farmer's market is bound to have lots of stuff to choose from. I'm about 50/50 raw/cooked: I can't stomach cooked spinach but a raw spinach salad is sooooo good. So if you find something that you aren't thrilled about, try an alternative cooking method or try it uncooked (obviously that doesn't work for every veg but it will be OK for a lot of them).

One of our favorite things is zucchini noodles. We have a "as seen on tv" Vegetti (spiralizer) and love it. Just Add a little olive oil and salt and pepper to the pan and they only take a few minutes to cook. Don't overlook the zucchini or the noodles will be mushy. Sometimes we top them with Parmesan cheese.

For me I don't eat more veggies as a simple side dish, I just add them whenever I can. Often we don't have a veggie side dish because we don't really need it. I picture your issue as a dish of blah limp veggies which I don't like either When I make scrambled eggs I add veggies - bell peppers, onions, zucchini, summer squash, spinach. Pasta with a sauce, I add mushrooms, onions, zucchini. Even my salads are loaded, lettuce, carrots, cabbage, cucumber, bell peppers, snap peas, etc. I basically put whatever veggies are sitting in my fridge in whatever I'm cooking. Even my meatloaf (Tyler's Ultimate recipe) has tomatoes and bell peppers in it. You can also make more veggie based recipes, beef and snow peas, beef and broccoli, veggie Alfredo, that type of main dish Now that it's spring our produce stand is open so I try to pick up fresh veggies twice a week which also helps with us wanting to eat them more. Since I haven't even had my first cup of coffee yet, I'm drawing a blank, but it's the better, easier way for us to get more veggies without even thinking about it. My struggle is eating enough fruit

No special veggie, or magical way to prepare them, but my answer to your question has got to be . . . Menopause. Sorry, but that's what it took for me to start liking vegetables.

I'm another that loves roasted vegetables. When I grill I always add onions, peppers, zucchini, asparagus, eggplant and/or corn.
Another great, easy way to cook vegetables is to sautee in a little oil (olive, coconut, seasame). Green beans, broccoli, cauliflower, carrots, etc., are all great cooked this way. Cut & prep your vegetables, heat a Tbsp of oil in the pan, add vegetables and stir for five minutes. If you like them softer, add a little water and cover the pan for a couple of minutes.
We rotate through different salads: coleslaw, romaine & kale, Caprese, Greek (no lettuce!), zoodles and spinach.
My kids have always preferred raw vegetables, so I started putting out a daily vegetable plate that they grab from while I'm making dinner. Most common vegetables are red peppers, cucumber, carrots, celery, cauliflower.
Salsas are an easy way to add vegetables and/or fruit to a meal.

Yea, I figured out that I didn't like veggies growing up bcz my parents way overcooked them. For just plain veggies I steam them, add a little pepper and garlic and only cook for 3 or 4 minutes. I think they are better with a little crunch. This goes for green beans, broccoli, asparagus, & brussels sprouts. A nice mixed medley works sometimes too, I like sauteed squash & mushrooms or spinach & mushrooms.

I love veggies but I have lived with 2 people that didn't like them for so many years I decided I was going to eat them if they liked them or not.
I like them in so many different ways that I don't have any problems with cooking them.
But We went ot my aunts house for dinner the other night and she did steamed cauilflower in her steamer. They were so good I ate most of the bowl she put on the table. I need to get a steamer like hers. because we had a couple different steamers and they were not as nice as hers and they didn't make good steamed anything. and the rice always stuck and turned a nasty brown color.
I love to stir fry my veggies.
I usually do chicken (because it is my fave) I do pork as well but I get broccoli slaw and cole slaw cabbage in the bags. Then I add chopped onions, mushrooms, and zucchini and bean sprouts. then I cook the chicken until it is almost done, I add in the veggies and cook them until they are done to my liking then I add just a touch of my toasted asian salad dressing or a little teriyaki sauce at the very end of the cooking and then enjoy eating it.
Crock pot meals are always a good thing to do with veggies.
We have 2 small crock pots so that we can cook amandas in hers her way and cook mine in my crock pot my way. She can't eat most of the veggies I like in mine.

I love cooked vegetables and hardly ever serve a salad. I do like salad but don't like making it. Dumb, I know. So I eat salad at restaurants and cook veggies at home.
Like some of the others, I do incorporate veggies into my mixed-up-type dishes like pastas, casseroles, etc. That counts as veggies!
I also like roasted vegetables but it does take some experimenting to get the timing right. Be sure to toss them in olive oil first and turn them over once while cooking.
Usually I just steam vegetables on top of the stove. I guess by steaming, I really mean boiling, but it's in just a little water so they mostly steam. I will start with some carrots, then after a few minutes add in the veggies that cook more quickly like broccoli, cauliflower, zucchini, etc. It's always more interesting on the plate and in your mouth when you have several different veggies mixed together instead of just one. No sauce or anything, but sometimes I toss in some butter after draining the water.
Don't cook them too long!

I do not like vegetables and have given up on liking them. I do eat them because they are good for me. And I've learned to cook them in ways that are less objectionable than other ways. Roasted or steamed are fine. Boiled to death is not. Raw gives me indigestion.

We didn't just have iceberg lettuce, we always had a leafy green lettuce mixed in with it, too.

We roast all kinds of veggies.... experiment with different flavored balsamic oils. So good!
We also grill veggies. My favorites are zucchini, corn, and asparagus.

I can count on ONE hand the veggies I enjoy. I eat big salads at least 4 days a week, but outside of that I don't eat any other veggies.

I make a simple dressing that I drizzle over most of my vegetables. (Cooked and raw). My kids love it and eat all kinds of vegetables as long as they can put some of the dressing on it.
The sauce/dressing is just three ingredients: Olive oil Balsamic vinegar Honey

I have a couple suggestions.
The first, as another poster said, forget veggies as a side. Focus on adding them to your main dishes. Add a bunch of veggies to your eggs at breakfast, use spinach and roasted red peppers on a sandwich at lunch, add a bunch of them to pasta at dinner etc.
My second suggestion...think of the veggies you do like. What do you like about them? Try a similar but different veggie. Also search online for new/different/unique recipes for the veggies you do like.
I recently tried a new zucchini recipe. Parmesan garlic zucchini. I don't have the exact recipe handy but it's super easy...
Place a rack on a baking sheet. Remove ends of zucchini and slice lengthwise. Place slices on the rack. Brush with extra virgin olive oil. Sprinkle with Mrs Dash veggie blend. In a bowl combine minced garlic, parmesan cheese and Italian-style bread crumbs. Press onto zucchini. Bake for 15 mins.
I can find the exact recipe if anyone wants. It was super good. They were the first things to go and everyone wanted more.

I didn't care for most non-starchy vegetables until I started trying them at various nice restaurants, as a matter of fact I disliked them so much that I wouldn't even try them. We were at a steak restaurant with my family and I decided to try the broccoli, it was delicious. So I found out how it was prepared and tried it at home. Things continued this way until some people came in our family that are excellent cooks, giving me even more exposure to properly prepared vegetables. For me, it mostly boiled down to a texture and spice issue. I can't stand soggy veggies, or bland veggies. I am willing to try anything once now, and really enjoy a variety!

I need details on how long you roast your vegetables and at what temperature. I tend to burn when I roast vegetables. I've never been a fan of most vegetables raw, they make me gag.

Thanks for all the replies. -- I'll try the recipes you all have suggested. -- And, I like the idea of adding veggies to things I've alreayd cooked, like my eggs or spaghetti sauce or whatever. I guess I figured we had to have "meat, starch, veggie" because that's the way my mother always served dinners. lol. But vegetables in something else would be much better.
And about making salds... I'm with the those of you who said they like salads but hate to make them. I LOVE a good salad when I'm out somewhere, but hate to cut up everything when I'm at home. lol

I tend to like steamed better than roasted but there is a recipe on Pinterest for garlic Parmesan roasted broccoli that is good. The seasoning also makes a difference in taste and also how long the veggies are cooked.
