That's how my mum cooked too - meat and 3 veg (usually mashed potatoes and frozen veg). Ugh. Boring and gross! Eating foods from different cultures saved veggies for me - Japanese and Chinese cuisines know how to make veggies taste the best they can be. Maybe if you focus more on eating veggies with a side of meat and starch, rather than the other way around. The protein and starches are easy for me, but we're supposed to fill half of our plate with veggies for good health. So I'm trying to look at veg recipes that I can add a little meat to. Starches are easy - rice, noodles, or potatoes, depending on the dish. Try looking at vegetarian cookbooks for some ideas!
