You ladies are simply the BEST Here's what I posted on Facebook today We are taking dinner over to MIL's tonight (we try to do that every couple of weeks as she is not well) ... tonight it's spaghetti made with fresh local sausage in a red sauce ... I should probably bring french bread as well as Nana is on some sort of medication that makes her eat like a horse Thanks everyone for putting up with my extended birthday ... just wait until next year when I turn 50

Over the weekend I made 3 pans of chicken enchilada casserole, we're having one of them tonight along with veggies which as of right now will be sautéed yellow squash and chard

I haven't even had lunch yet, but I'm already thinking of spaghetti, salad, and garlic bread. I want work in the yard after work; I have some flowers to plant. Who has time for dinner prep when you could be out playing in the dirt!?

Happy birthday, leannec . DS has a competition this weekend, and is trying to lose 1,5 kg before that, so he only wanted soup for dinner. DD9 and I ordered pizza, and I have told DH to fend for himself.

We're having pork chops and scalloped potato casserole, roasted green beans, carrots, and cauliflower, apple-cranberry sauce, fresh dinner rolls, and a shortbread/mixed berry/ganache dessert (not sure what to call it <shrug>)

DS' baseball game today is right around the corner from our favorite coney island, so after the game, I will go pick up some chili, and we will have coney dogs and chili fries. (it is too far from home to just order the dogs and fries and have them be any good)

Ta Da, it's here!! It's leannec 's birthday! Happy Birthday, girl!! We're having leftover baked pasta from last night. And salad. Trixie Bender - I was pleasantly surprised that this turned out pretty good. The pasta cooked better than I expected and wasn't real gummy at all. I think the stirring thing definitely helps it cook evenly (though I only did it about every 15 mins or so.) Anyway, a nice, light dish and change from my usual rich sauce. And quick and easy as can be. I'll make it again! Here's the recipe: Baked Pasta with Tomatoes and Parmesan

We're having chicken and dumplings with mashed potatoes. After a week of cooking for an army of guests, I'm glad to be back to the four of us! Happy Birthday to you, leannec!

Last week broccoli, shredded cheddar, and half-and-half were on sale. So that means tonight is broccoli cheese soup. I have to be careful how much of it I eat, with my lactose intolerance. It is so darn good that last time I made it I was sick for a week afterwards. But soooo worth it. And for the last time, HAPPY BIRTHDAY LEANNE!!

marianne - is it super oily? That's a lot of olive oil to ingest. I would love to try it because I do think the tomato flavor will be absorbed better into the pasta after they have been revved up by the oil, so to speak. Thanks for sharing that recipe. We are empty nesters so I feel for the parents on the thread who have activities to attend during dinner hours. I have that happening today as several of my former students invited me to their soccer game at the high school against the rival school and it's gorgeous weather there. So I am headed over there during our usual dinner time. Dh says to pick up something while I am out rather than mess with cooking. I watch pennies closely as a retiree, but I might take him up on that tonight. We are camping this coming weekend so that's cheapo for meals - I guess I'll treat ourselves. Thanks for the thread. We are our own little tribe here - love it.

Surprisingly, no, it wasn't real oily at all - it was pretty much absorbed and gave it a good flavor. I only made a half recipe but even so, if making the full one, I think I'd cut the oil down a bit anyway.

We had a Game of Thrones viewing party potluck last night and everyone left their leftovers. I'm making ham and cheese paninis with various kinds of salad that are in my fridge. It's 81 in DC today so I'm not turning on the oven!

Beef Koobideh leftovers with a Mediterranean cucumber salad. I finally found a koobideh recipe I liked and we grilled some up yesterday. it turned out great and I'm glad we have leftovers.

I notice you always have lots of veggies in your dinners, and I want to be like you! Your dinners seem like you spend a lot of time cooking, (fresh rolls and dessert)how do you do it every night?! I'm lucky to throw together something semi-healthy. Tonight it's going to be pantry soup (homemade from pantry ingredients). It's rainy and cold, supposed to be that way all week. Spring always reverts to winter here for a while. I could put some stuff in the bread machine and make bread. I'm supposed to be watching my carbs (diabetes). I get so mad, it seems like I can never have what I want! When it's cold I want comfort food, bread, pasta, chili, etc. Summer will be easier.

We are having beef & lamb feta burgers and/or sliders with grilled onions & zucchini. I'm making both sizes because I found our favorite brioche buns come in a slider size! There will also be a salad on the side.
