Do you use frozen or fresh veggies when you roast them? I notice you always have lots of veggies in your dinners, and I want to be like you! Your dinners seem like you spend a lot of time cooking, (fresh rolls and dessert)how do you do it every night?! I'm lucky to throw together something semi-healthy. The only non-fresh vegetable I use is canned corn. I cook a lot of casseroles, and I've been roasting the veggies lately because it's easiest for me to throw them in the oven with whatever else is in there. The casseroles I make usually contain 1 or 2 vegetables, other than the ones I serve on the side. I cook a lot of veggies and I never really realized just how many until I became a regular on the What's for dinner thread. Sometimes when I'm typing my reply, even I think "Wow! That's a lot of vegetables!" I do realize how very lucky I am that most of my family likes vegetables and casseroles. There are days, like today, when I feel like I have spent every minute in the kitchen (mostly because I have). Not every day is like that though! As soon as the weather warms up a little more, I will abandon my kitchen for my back yard, and dinners will be super quick and easy. I rely heavily on my freezer. I rarely freeze pre-made casseroles, but instead freeze portions of meals (cooked ground beef, shredded chicken, spaghetti sauce, taco meat, Italian beef, applesauce, etc.) which makes things go a little quicker on days I'm short on time. At least that's what I tell myself when I spend days pre-cooking things to stash in the freezer. ETA: Tonight's meal was more time consuming than most. The main dish itself is time consuming. I baked the dessert (and two pans of rice for the freezer) and prepped the veggies while the bread machine was making the dough for the rolls. The cranberry-apple sauce came from the freezer.

My dinner was a bit of a slap-dash affair. After the ground sausage thread the other day I decided to make sausage rolls, but I cheated a bit – instead of making up my own ground sausage mix I bought some chorizo and squeezed it out of the casing and wrapped it in puff pastry. Very easy and tasty. I also made some Greek fried cheese (saganaki) with honey, lemon and oregano.

Sending lots of belated very Happy Birthday wishes to you leannec! Hope you had a wonderful day. I missed catching up with this thread yesterday evening. We had spaghetti bolognese with fresh ciabatta bread followed by Greek yogurt, blueberries and strawberries last night. Now to decide on what we are going to have tonight!

Over the weekend I made 3 pans of chicken enchilada casserole, we're having one of them tonight along with veggies which as of right now will be sautéed yellow squash and chard Can you share your recipe for the enchilada casserole? I have an unexpected evening to myself (yeah!) so it may just be popcorn and a catching up on whatever is on the DVR. I used this recipe for the chicken: www.carlsbadcravings.com/easy-slow-cooker-shredded-mexican-chicken-recipe/
Once shredded add: 1 can kidney beans 1 can black beans 1 can pinto beans
Layer in a casserole: Chicken/bean mixture Light sprinkling of shredded cheese Flour tortillas
Keep layering then pour over the top green enchilada sauce topped with another light sprinkling of cheese. Bake at 350 for approx. 30 mins
