We're having creamy chicken enchiladas; DH is having Mexican rice with his and I'm having refried beans. We'll probably have a small salad to go with. Pineapple chunks for dessert.

We are having Meatloaf, baked potatoes and green beans. My neighbor just brought over some slices of cheesecake so we'll be having dessert. Yum! We are having the same thing except Key Lime pie for dessert.

I ended up doing kid stuff last night, so hopefully tonight I will manage to make the broccoli cheddar soup. I might put bacon bits in it, too. I like to add a little excitement to life. You are really living on the edge, aren't you?? I will be getting Thai. The kids don't like it, and that's fine. They can have Burger King or Subway or sandwiches from Safeway or Walmart. In fact, I have been so inspired by Lucy's dangerous lifestyle that I think I will let them get pizza again! They will be thrilled. Lisa You made me LOL.

Easy dinner for me tonight - Chick-fil-a. I'm going to pick up an extra salad while there so I can have it for lunch tomorrow. I love their Spicy Southwestern Salad - yummy!

Nothing for me. DS has a stomach bug and that kills my appetite. I made a TON of food for the week yesterday so there's grilled steak, chicken, pork chops, hamburgers, green beans, oven roasted broccoli, cauliflower, baked potatoes, pasta....they can mix and match whatever they want.

After a long day at work today, it was quick and easy beef tacos, with sift tortillas, and the usual additions; sour cream, cheese, shredded lettuce, diced tomatoes, green onions, and avocado.

Well, DH had leftover spaghetti and the last hot dog while I had a tomato sandwich. It was a store bought tomato but ours in the garden are beginning to turn. So I will be eating a home grown tomato sandwich SOON!!!!!
Color me jealous! Also, protect your new tomatoes from people like me who would be happy to fry up the green ones. You sound just like DH - he has his eye on one of the greens one right now - he loves fried green tomatoes too. Last week we went to a local New Orleans restaurant and they had Fried Green Tomatoes on the menu - of course he ordered them and talked about them for DAYS!!!! Come on down and we will share with you.

The boy wasn't supposed to be here for dinner, so I started sort of snacking my way through the day. I had to run over to my mom's this morning and by the time I got home it was early lunch time (around 11) and that is when the first snack was had. So my 'dinner' more or less started with peanut butter toast, meandered it's way to garlic hummus and chips, about a quarter of a bbq (sauce) chicken breast (from the freezer) and peas, and finally ice cream. Then the boy came home hungry. I gave him a piece of the bbq chicken (from the freezer,) peas (also from the freezer) and a left over biscuit. Technically I managed to both feed him and feed him from most of the requisite food groups fairly healthily in less than five minutes and only having to push a couple of buttons on the microwave and I am SO calling that a total mom superwin.

I am baking salmon with lemon & dill, sauteeing broccoli & carrots and adding brown rice for those that want more carbs. Thanks for the link to the lemon orzo shrimp jassy, that looks fabulous!
