Tonight is mega easy. Dh is going to a team dinner and everyone is off doing their own thing, so dinner is a non-issue. I'll just enjoy the day off.

Dh has a meeting with our financial planner late this afternoon and asked if I wanted to join them ... my answer was a definite "NO" ... listening to them talk about our investments and the market is like listening to freaking Swahili ... my eyes literally glaze over I'll stay home and make homemade chicken noodle soup ... with my secret ingredient of a bit of lemon juice Dd #1 doesn't like it (of course) so she's fending for herself

I'm still trying to make a spaghetti dinner but we keep making last minute substititions. Last night DH made himself a turkey sandwich and I had fruit and cottage cheese. I am a little in awe of those of you who have a real dinner each evening. Even when I meal plan, we just eat what sounds good to that night.

Baked chicken with veggies. Also matzo ball egg drop soup. Which is probably the best use of matzo ever, I'd eat this when its not Passover

I mean I don't write down my meal plans so if I feel like steak one day that I planned fish and I have it then I'll switch. And none of them need to know it was a last minute switch. At Christmas time DD was gone and she made dinner she said She wasn't sure if this was tonight's dinner or not but She knew how to cook this. It is now! I'm like, if your cooking it's your choice, feel free to make anything in fridge and I'll gladly eat it

After tonight's baseball game, which is thankfully a home game, we will grill sliders. They are still in the freezer, but they cook up fast enough that we can just throw them on the grill frozen. I'm assuming the side will be chips because I have nothing else in mind!

My MIL is coming over for dinner tonight. I have two pieces of cod in the fridge that I'm going to make, along with some green beans and blistered cherry tomatoes.
I usually fix salmon, never cod, so I'm not quite sure the best way to cook it. Anyone have any tips?

2 baseball games tonight, of course, both at the same time in different locations, plus, I have a late 6:15 - 7:45 snack shack shift at one of the games - oh joy!
Last night I made lentil and veggie soup, dh will be home before me, so all he has to do is blend the soup, because Lord knows if the boys suspect veggies in there dinner will go from taking 10 minutes to an hour. I think I also have some cornbread in the freezer which I can dig out to serve with the soup.

scrapmaven, enjoy your day off! They're rare and need to be enjoyed to the fullest extent! newlywoods03, love the new avatar! I took some spaghetti sauce out of the freezer to serve with some pasta (duh!), roasted green beans, carrots, and cauliflower, cantaloupe and pineapple chunks, rolls, and they're still working on the shortbread dessert from the other day.

I will be grilling moose burgers. I bought some fresh corn on the cob and have some leftover pasta salad that we should finish up. I "think" this is the last night I have to cook this week!! Woo-hoo!! It's a big weekend in the aviation industry and we have dinner appointments for the next three nights. I find it somewhat boring but at least I don't have to cook!

I need to go to the store. I will likely fix salmon since we haven't had it in a while. Major first-world problem: I finished working at 8:40 as I was Skyping with a client in Australia. I tried to place a to-go order at my fave Thai place, but sadly, the kitchen was closed. No other Thai places nearby were open, either. I had to settle for spinach enchiladas. Thankfully, they were delicious. But I am still craving Thai. #TheStruggleIsReal Lisa
