DD and DSIL will be home next week. Their best friends will be joining us for dinner Saturday. DD wants grilled burgers and grilled corn on the cob. She also wants something healthy to go with it. Here is the kicker: DH is diabetic and just had bypass surgery. DD, DSIL, and their friends are crossfit/paleo. DD and SIL splurge once a week. Their friends look at EVERY ingredient. (The BFF made DD's wedding cake - homemade fondant and red velvet cake - the red came from roasted beets!!!! Took a while to get my piece of cake down!) I'm trying to figure out a reasonable menu with options for everyone. What are your favorite hamburger toppings? I will have a portobello burger, they will all have buffalo burgers. I'll have lettuce, tomato, grilled onion slices, pickles and low fat cheeses. I thought about grilling a few jalapenos and slicing them up. Anything else I should add. DD said no bacon unless it is turkey bacon. Passing on that one. For an appetizer, I will make a layered Mediterranean: homemade hummus, homemade tzatziki, dice cucumbers, tomato, kalamatas and feta with a drizzle of a good olive oil. I will make homemade whole wheat pita bread and have carrots and cucumber slices for dipping. I need another side. DD said just lettuce, tomato and cucumber salad would be fine. I'd like something a little more BBQish. I will make deviled eggs because it is DIL's favorite. No beans or pasta because of the corn and hummus and pita. Any suggestions? I've looked at broccoli salad with greek yogurt dressing options and apple coleslaw options as well. Also, can't decide on dessert. I don't want a fruit salad. Just looking for ideas and suggestions. The peas always come up with great options. I know they will eat whatever I put in front of them, but I just don't want to totally horrify the friends. I am so overthinking this. TIA! ETA: Don't let the restrictions scare you away. You can post any recipes you want!!!! Follow the guidelines or not. Life is too short to pass up a chance to share a good recipe.

Wow, that's a very specific menu for guests to request. Even your own child (it doesn't sound like she lives at home anymore?)
Better yet, have your DD bring the dessert.

Even your own child (it doesn't sound like she lives at home anymore?) Better yet, have your DD bring the dessert. No, they don't live here anymore and will be flying in that day. The friends are picking them up from the airport (they are about an hour closer than we are) and will bring them to our house to hang out for the day and join us for dinner. Bringing dessert isn't an option for DD that day. Definitely NO beets in the dessert! Also, DH needs to watch what he eats as well. Any of them will eat whatever I put on the table. I just am looking for ideas, options and a public forum to stress over it a bit more. Possibly to even get a little pity!

I think your menu is more than accommodating. Make a plate of cookies or brownies and slice some melon. Done.

How about fruit salad in a bowl, or a platter filled with different fruits and brownies on the side if people want to indulge.
Whenever we have a BBQ night with friends I always make a lot of salads instead of burger toppings. Quinoa salads, bean salads, lentil salads, kale salads, they're all delicious and healthy. I'm one of those people that refuses a burger bun but will happily fill up on salad.

A kale salad, there is a really tasty bagged chopped kale salad at the grocerey store. It comes with a sweeter dressing and you could serve the dressing on the side. Dessert would be an angel food cake torn apart with lemon curd, whipped cream and fresh fruit combined, like a trifle. You have my pity as I find it difficult to prepare dishes when there are so many special requests. My dgc has a severe nut allergy and I do keep a nut-free kitchen. The original Red Velvet cake was made with strained beets to give it the red colour.

side dishes - I like caprese salad or this broccoli salad paleoleap.com/broccoli-apple-salad-walnuts/ (it's paleo but I'm not) I probably would serve watermelon or cantaloupe or honey dew for dessert along with whatever I wanted be it Texas sheet cake or brownies or cookies

We often do grilled mediterranean vegetables with burgers or steaks. Slice aubergine, zucchini, peppers into roughly equal size pieces, drizzle with a bit f olive oil, maybe some herbs, then cook on the grill.

Hail Merry has great desserts. They are super clean and totally would pass a healthy persons desire for something. The tarts and macaroons are so good! I love dessert and am not easily fooled so if it passes my test trust me it is good. We have them here at Whole Foods, Costco and Central Market. You can check the website to see if they are stocked near you. I like to take the dark chocolate tarts and put berries with them. It is divine! The lemon tarts are amazing with fruit too.

Grilled pineapple is a delicious side. For dessert: I agree with a PP, angel food cake & sliced strawberries.
